I have so many fav's with this veggie... So many, but my latest, although not the healthiest, feast with zuchinni was cut with summer squash make a foil packet and grill with some butter and Splenda brown sugar.
I like to cook it with some diced tomatoes. Use rotel for a mexican themed meal, the basil and oregano seasoned for italian meals. Add a little parmesan cheese if you feel like it. Quite tasty!

We grow our own, so I let it get rather large, then we slice it into rounds about the size of a thick hamburger, brush it with olive oil and sprinkle it with old bay and grill it!
Its also super quick and easy to cut it into chunks and add a couple of drops of water and or butter to it in a bowl and microwave it for a couple of minutes. I bring it to work in a baggie sometimes and do this to have with my lunch.
You can dip it in egg and then parmesean and fry it til brown and crispy on the outside then eat it with a dip like maybe ranch dressing.

Im simple, I love it raw. lil salt lil pepper (the small ones).
sauted with oil and served as is for a side. I reallyl ike the flavor of it by itself. Grilled with oliveoil and sea salt.

I slice it into rounds about 1/4 inch thick. Then I fry them in olive oil until they are goldden brown, then I flip them over and let the other side brown. They become really sweet and yummy.
The only way I could get my family to eat zucchinni was to chop it up in little chunks and fry it , along with tomatoes, red onions, and parmesan cheese. Not too long, or it goes mushy. All of the flavors actually work well together.

Cut it up in sticks (1/2" wide x 2-3" long).
Sautee in coconut oil and olive oil with salt and pepper
When it's starting to brown, throw in a handfull of sesame seeds and cook for a couple more minutes
Remove from heat and drizzle with seasame oil

BellaCarol...I made fried zucchini this weekend with my eggy muffins. I posted the pics in my journal if you want to looksy. Thanks for sharing your ideas...its great to have some changes in this way of eating.
1 tablespoon butter
1 zucchini
salt
1 teaspoon spring onion
½ mince garlic
1 egg
2 tablespoon parmesan cheese
Combine zucchini with salt in a bowl. Let stand for 15 minutes.
Squeeze with your hand to press out moisture. Stir in eggs, cheese and
garlic. Melt 1 tablespoon of the butter in a wide frying pan over
medium-high heat. Take 1 tablespoon mixture and pat slightly to make a
patty. Cook patties, turning once, until golden on both sides.

Third time's the charm!
I cook zucchini in olive oil and garlic and chili until cooked but with a bite still... add a handful of halved cherry tomatoes and cook until they just begin to soften, then throw in a large handful of fresh basil leaves (torn up). DON'T cook the basil or all flavour will be lost... just heat until wilted.
Yummy! If you have leftovers, they're great in a frittata.
