    Oh... forgot to say... the zucchini are diced!

        I like to sautee it in olive oil, garlic, salt and pepper. Towards the end add just a few tomatoes and some fresh basil til it wilts. YUMMO!!

            I make a mean microwave recipe.

            I take a small zucchini or yellow summer squash (whatever's on sale), and I cut the whole thing into thick slices. Then I quarter the slices so I get nice-sized chunks. I put the zucchini pieces in a bowl and put it in the microwave for 30 seconds. Then I add a half can of canned chicken and put that in the microwave for 30 seconds. Then I add a 1/4 cup alfredo sauce (I use Ragu Roasted Garlic Parmesan, 3 carbs a serving, and delightfully cheap) and microwave it for a final 30 seconds. Then I put a half tablespoon of dry parmesan on top and eat it. It's so good and soooo amazingly easy!! (Kinda like the Pizza Hut Chicken Pasta Bake, one of my old favorites). The zucchini/summer squash gets soft but not mushy!
            No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.
