      lol! I've been looking all over for a low-carb Chocolate Cake recipe. Both my boys birthday party is tomorrow and I'd like to enjoy some cake with them. If I can't find the recipe I'll just have some low-carb ice cream

        Here's an easy recipe for a chocolate cake. It's not for induction because of the almond flour.


        3 MINUTE CHOCOLATE CAKE
        1/4 cup almond flour, 1 ounce
        1 tablespoon cocoa
        1/4 teaspoon baking powder
        3 tablespoons plus 1 teaspoon granulated Splenda or 1/4 teaspoon liquid Splenda
        2 tablespoons butter, melted
        1 tablespoon water
        1 egg


        Mix the almond flour, cocoa, baking powder and granulated Splenda, if using, in a 2-cup glass measuring cup. Stir in the liquid Splenda, if using, butter, water and egg. Mix well with a spoon or fork. Scrape batter down evenly with a rubber spatula. Cover with plastic wrap* and vent by cutting a small slit in center. Microwave on HIGH 1 minute until set but still a little moist on top. I had to do mine for 1 minute 20 seconds. Cool slightly and serve warm topped with whipped cream or cool completely and frost as desired.

        Makes 2 servings

        With granular Splenda:
        Per Serving: 237 Calories; 22g Fat; 7g Protein; 7g Carbohydrate; 3g Dietary Fiber; 4g Net Carbs


        With liquid Splenda:
        Per serving: 227 Calories; 22g Fat; 7g Protein; 5g Carbohydrate; 3g Dietary Fiber; 2g Net Carbs

              For anyone on induction try substituting the almond flour with ground flax.
              Tastes different but still nice I am told.

              I dont like chocolate cake so used to make it for my DH. Usually I made il in small rubbermaid 'takealong' pots so there were 4 buns (for portion control reasons).
              Wondering how to get 'most' of your net carbs from your induction veggies?

                Oh you could make a chocolate frosting too with cream cheese, a packet of Splenda and a little cocoa.

                      If the party hasn't happened yet, you can try this recipe:

                      One serving chocolate cake

                      because that way you can make the kids' cake and have just one for yourself and it only takes one minute.

                          I took that three min cake and made it better I think



                          fresh mint chocolate cake
                          1 cup of unsweetened dried coconut ground in the coffee grinder or food processor

                          1/4 cup cocoa powder
                          1 teaspoon baking powder
                          6 packages of splenda (or if you are in Canada 2 Splenda and 3 cyclamates)

                          1 stick unsalted butter, melted
                          1 tsp vanilla extract

                          1/2 tsp kosher salt
                          2 eggs

                          1 handful fresh chopped mint (I grow chocolate mint that is perfect)

                          Mix everything together in a bowl with a wooden spoon until well mixed then pour in a greased souffle dish or small cake pan
                          bake in the oven at 350 for about 25 min or until top bounces back when you press on it

                          or top with berries ..enjoy


                          this is very good sliced with marscapone cheese

                              GBU honey this is so good I was stunned !!! the fresh mint leaves gave it such a wonderful fresh flavor like mint chocolate chip ice cream kind of and the cake looked adorable baked in a souffle dish it puffed up nicely and I imagine if you made some fresh minted whipped cream with it and a garnished with a few mint leaves ..OMG luxury!!!
