  • Request: "Amazingly like stuffing?"

Someone posted a month or so ago a recipe they had made a recipe that they said tasted "amazingly" like stuff stuffing. The main ingredient was sausage, and I don't recall it having any breading (like Revolution Rolls). And, I don't even think the recipe itself was for a mock stuffing -- it simply tasted like it, she said.

I meant to save the post for Thanksgiving -- thought I did in fact. But can't find it!

If "you" are listening, please point me in the direction of your yummy post!! OR if anyone else can help, that would be great... Thanks.

I think that was in the Thanksgiving/Holidays related Thread in the Main Forum.

I'll bet it was this recipe from Linda Sue's website:

I don't know about the recipe you read, but i have been trying to find one I made last year that was a total hit with everyone! Even everyone who wasn't doing low carb!!!!

All I can remember is I used cauliflower, sausage(I actually used veggie sausage), mushrooms i think, celery and onions, and some belle seasonings... it was soooooo good!
I am hoping to try to duplicate it this year, and if so I am definitely going to write it down!!!!!

Changing posted a recipe for a quiche that tasted like stuffing. Don't have the link right now but you could probably find it under her posts.

                      Re: Request: "Amazingly like stuffing?"

I am pretty sure this is what I made, but instead of all the spices I used the bells seasonings...

3/4 pound turkey sausage (you may use pork breakfast sausage)
                      1/4 cup finely chopped celery
                      1/4 cup chopped red onion
                      2 eggs
                      2 cups coarsely chopped cauliflower
                      1/2 cup diced yellow squash
                      1/2 cup grated Parmesan
                      1 tablespoon chopped parsley leaves
3 tablespoons chopped fresh sage leaves
3 tablespoons chopped fresh thyme leaves
                      1 tablespoon minced garlic
                      1/8 teaspoon salt
1/8 teaspoon fresh ground black pepper
Equipment: 8 by 8-inch square baking dish

Preheat oven to 350 degrees F.
Remove sausage from casing and crumble it into a pan over medium heat. Add the celery and onion and cook, stirring, until browned. Drain fat if necessary.

Beat the eggs in a bowl. Using a spoon, mix in the sausage mixture and all the remaining ingredients. Pour the stuffing into the baking dish and bake until hot and browned, about 30 minutes. Serve immediately.

Does it come out the same "texture" as stuffing...I'm big on textures...can't eat yogurt for that reason...don't ask me what I think of it or you won't ever be able to eat it again either!

its was very very similar with the veggie sausage, not sure exactly how it will be with regular... I used morningstar farms links...
