  • Crepe as Pasta???

    I have a friend coming over a couple fo days after Thanksgiving. She always EXPECTS to eat dish I make for her which is Grilled Chicken and Shrimp Alfredo w/ Pesto. The day after Thanksgiving is when I restart Atkins. Now, I don't want to let her down, so I was thinking that mabe I could make the crepes recipe I have seen on here and cut them in strips and use them like fettucini noodles. Has anyone ever tried this and does it work? Does anyone have a better idea?
    Thanks for any info you may have.

    never used "egg" noodles but I've used spaghetti squash, zuchnini cut in sticks, even portablella mushrooms sliced as noodles ( that was too chewy but tasted good)

      You certainly could.

      I like to use a vegetable peeler and "peel" an entire zucchini squash into "ribbons" and sautee/steam them for use as a "noodle"

      It's really good.

        Oh man I would love zucchini as noodles in ribbons!!! But, my friend is a vegie phobe...She eats chicken, pasta and potatoes (that is all)....I have to sneak in the pesto under a sea of butter, cream, garlic and romano cheese. She said this is the only dish that she will eat the shrimp in.

          Yeah, I've done Chicken Alfredo with the zucchini as noodles...it works very well and that's one of my favorite veggies anyway....very good!!

            But what about using the crepes cut into strips as noodles??? Anyone ever done anything similar?

              there are low carb recipes that use eggs cooked like a pan of srmabled eggs cut in ribbons as noodles in many low carb cook books

                  I am a total fan of spaghetti squash.

                  Now, I know it's not long, wide strips, but it is outstanding with alfredo sauce and pine nuts, with a bit of broccoli or spinach. It's also so easy to prepare that even I can;t screw it up!

                    Hi Cleochatra...great name!
                    Yes, I love spaghetti squash, but it is seasonal where I live and my friend won't eat it. I was particularly thinking of something I could share with non-Atkins eaters, but what the heck...it is my choice of food, isn't it?

                      DANA CARPENDER'S 500 LOW CARB RECIPES IS GREAT FOR BEGINNERS CAUSE SHE discusses low carb kitchen staples and supplies and explains why.

                      She isn't atkins low carb so you will nedd to ful fat her stuff but they are good.

                        I didn't want to try squash either. I mean hello? Pumpkin pie parading as spaghetti?!

                        Has she tried it? If not, tell her it's whole wheat squash pasta (like the hep-cat colored shells they've come out with that are supposed to look healthy because they're orange or green). She'll never know the difference! Bwahaa!!!

                          I second Dana Carpender's 500 Low carb recipes, and the 500 more low carb recipes books.

                          However, I use Linda's Low Carb site (Pam, those links I gave you) the most. Her site is great because she marks the induction friendly recipes with an asterisk (*) and there aren't too many weird/hard to find ingredients.

                          I also love some of George Stella's cookbooks--they aren't really induction friendly though, more OWL friendly.

                            You know, as an aside, I haven't personally tried this, but there are some awesome low-carb wraps out there that I've been dying to try as a low-carb lasagne.

                            I know I've had awesome luck with them making chicken quesadillas! And their GI is so low they never affected my cravings. I recommend the flatout low-carb breads highly.
