As they get so much oil (like eggplant) I just fry them in a pan (really hot) with some drops oil and when they turn gold I cook them in the oven with some cheese. You can also add tomato (home-made) sauce and have your own Ratatouille It´s a nice side-dish.

Here's how I use Zucchini as noodles it's really good. I found it on My Fat Secret website.
With a good potato peeler create long "noodles" by starting at the top of the zucchini and peeling wide ribbons down the length of the zucchini.
Continue making ribbons as you turn the zucchini to get all the green part off first.When the center portion becomes too thin , set it aside to use for a salad and start a new zucchini.
Heat a large skillet on medium high.
Add the olive and zucchini "noodles."
Saute the "noodles" for 2 to 3 minutes.
Season with freshly grated black pepper and salt if desired to taste.
Also, for fried zucchini....I slice and roll in parmessian cheese and fry with a tad of butter. Yum, they are delicious. Sometimes I'll fry a couple slices of bacon with them.
I also slice the small ones and make stuffed zucchini boats. Talk about delicous!! I try different 'stuffings' to put in them. Sometimes I use tuna salad. Sometimes I use chicken salad. I've used shrimp salad. I've used cheese/tomatoes/green peppers.
I've used onion/hamburger mixture with sprinkles of cheese. So many things you can stuff them with.
I've diced my zucchini and fried with onions, mushrooms, green peppers and celery and made a stir-fry to put over my substitute rice (cauliflower).

I make them like frenchfries. I cut them up french fry style. Dip them in egg and coat with parmesian cheese. Deep fry them in oil. I also do this with egg plant.

Shred a zucchini or two.... you can use the overgrown ones for this. Squeeze out excess water. Add an almost equal portion of shredded cheese, and an egg to bind. Season to your liking. I've kept it as simple as salt and pepper to as "odd" as nutmeg and cayenne. Form into small patties, dip in finely ground hazelnuts and pan fry about 3-5 minutes on each side until crispy on the outside.

Oh gosh! that does sound good.... I tried the recipe where you dip them in egg and then parmasan cheese and then fry in butter! That was a huge hit! Everyone loved them, including my ds! Thanks for posting it! now I'll have to try some other ideas! Keep 'em coming!

I actually tried zucchini for the first time on monday and just fried it in butter and added a couple of ozs of cheddar while it was frying, that was yum so cant wait to try your way!
