    good 'on the grill' vegetable recipes

    It's camping season!!! I need recipes for veggies that I can throw on the grill... a charcoal grill with smoked flavor wood chips...

    I like to grill asparagus. Just trim up your asparagus, place in heavy aluminum foil, doctor it up with favorite spices with a drizzle of olive oil, wrap up and grill away. It's yummy. You could do almost any type of vegetable this way. . . and no clean up!

      I make a marinade of olive oil, fresh garlic (use a garlic press) and a bit of balsamic vinegar for:

      - peppers cut in large chunks
      - large mushrooms
      - zucchini (cut on diagonal to make bigger slices so they don't fall through)
      - tomatoes (not too ripe) sliced about an inch thick, maybe some onions cut the same way.

      The tomatoes need to be done on higher heat & will turn golden yet retain some firmness. The rest on medium so they actually cook some in addition to getting a bit charred. Yum. This is also very good cold with a little vinaigrette, and would be really good that way with a little aioli (garlic mayonnaise) for dipping.

        Onions - cut them into rounds, stick toothpicks in them at the 12, 3, 6 and 9 o'clock positions to keep them from falling apart. Smear them with oil and toss on the grill.

        Eggplant: stick the whole eggplant on the grill, turning it to grill it all over. When it's soft and cooked, scrape it out of the skin, and mix the puree with a good extra virgin olive oil, chopped onion and maybe some chopped tomatoes

        Acorn squash: slice it into rounds, discard the seeds, brush with oil, grill until soft.

        Belgium endive or fennel: slice them lengthwise so that the root holds the leaves together. Brush with oil and grill until soft and lightly browned
