My two favorites are Liver Stroganoff (bite sized pieces of calves liver with an onion sour cream sauce) and Steak & Kidney pie (which is made Shepherd's Pie style with mashed cauliflower on top rather than pastry).

I thought I was the only person in the world who liked tripe (under 85 anyway lol), and other animal yukky products. They are quite popular in the north of the UK, tripe, bag, chitterlings. But then when you are given them as a small child you think its normal i suppose. My husband insists i eat it when hes at work lol

Organ meats during induction were limited to 4 oz a day, page 124 footnote.
I've been meaning to buy some calf liver.. the only organ I really eat.

Here's a quick stab at a few - but think variety of meats, not so much "offal". (yuck)
How many calories are in Pork, fresh, variety meats and by-products, liver, raw (look around in there...)
How about balut? Probably 0 carbs... dare ya!

Sherry is allowed during the On Going Weight Loss Phase of Atkins.

Hi,
nice to join here, you have a great site.
Interesting for me to do a search on the
site for recipes with liver, kidney etc.,
and, correct me if I'm wrong, finding none.
I love meals like kidneys in sherry shown
in this recipe:
Veal kidneys in sherry sauce: Recipes: UKTV Food
which I would serve on faux rice rather
than toast, but would welcome suggestions
on a substitute for 375ml of sherry.
