pumpkin dumplings????

  • pumpkin dumplings????

    okay I posted the Amish skillet chicken with the pumpkin crust question and now I'm thinking pumkin dumplins for left over turkey dinners.

    So how do I make pumpkin dumplings and not those awful bisquick type balls dumplins are like a think noodle not floating biscuit balls.

    You know, 2Big, a couple of weeks ago, I was watching a cooking show on potato gnocchi and I figured you can probably sub pumpkin or winter squash for the potato...the problem will be finding an appropriate substitute for the flour potato gnocchis contain.....

        It was "Lidia's Family Table". Here's the recipe for the potato gnocchi


        I also looked up recipes for pumpkin gnocchi and found a few. This one is typical of the recipes that don't combine pumpkin with potato.



        I was thinking along the lines of using dehydrated egg whites instead of flour....

          wouldn't eggwhites just give me an omlette?
          okay I was thinking WPI instead of flour

          SO I just use a basic pasta dough recipe and use the pumpkin in place of all the liquids? like this one? http://www.fabulousfoods.com/recipes...dumplings.html

          for dumplings i was going to roll it out pie crust thick and use my pizza cutter to make 1 by 1 squares and then drop them in the boiling liquid. I will be making some test ones in Water before i waste my turkey broth on them.

            That would probably work.

            I used powdered egg whites once when I was experimenting with some leftover "Fauxtatoes" to make hushpuppies. The powdered egg whites made the fauxtatoes "sticky" enough so I was able to fry the "hushpuppies". They turned out light and crispy. When I tried using vital wheat gluten and whey protein isolate, the hushpuppies fell apart in the oil.
