  • Miss Scalloped Potatos? Try these!



    My scalloped turnips!!

    4 turnips, peeled and sliced THIN
    1/3 cup fresh chopped onion
    minced green pepper to taste
    4 oz cream cheese softened
    1 cup heavy cream
    4 oz shredded cheddar
    1/4 cup butter sliced into pats
    Crumbled bacon (optional)

    Spray 8x8 pan with Pam. Add sliced turnips, onion, green pepper. Salt and pepper to taste. Add pats of butter. Add cream cheese and pour heavy cream over the top. Sprinkle with cheddar cheese. Bake at 400 for an hour. Top with bacon if desired.

                I am going to have to try these, maybe tomorrow or Saturday.

                Funny thing,... everytime I make deviled eggs and my husband says, "what you making?" I answer him "scalloped potatoes!".... I think I am missing them really bad!!! I don't make them too often, but obviously, they are big on my 'good food thats bad for me list.'

                  Okay, I could not wait! I made them tonight and I agree, they are DELISH!!
                  I only had 1/2 cup of Heavy Cream, but they were still very, very good. I also skipped the green pepper and bacon.

                  You did not mention, but do you cover them when you are cooking? I assumed yes, but not sure.

                  From my rough estimate, I got about 14 total carbs for the whole thing... am I doing that right?

                      Would sooo love to try this recipe, but haven't seen a turnip on sale here in Italy for..... well, forever! Is there any other veg you could use in place of the turnip? Celariac? Squash? Daikon? Tks.....

                        my question too....
                        In Portugal my mother used to use them in soups. I find turnips too bitter but I would give it a try...if there was a single one for sale in Sweden...

                          I'm not sure about other veggies .. hmm....I'll have to think about that!

                          Eleonore, you can sprinkle a little Splenda on turnips to mellow them out a little .. or I've talked to some people who soak them overnight in milk and then drain and rinse them before cooking which seems to eliminate bitterness.

                            I usually soak eggplants in water and salt for at least 30 minutes before cooking them to get rid of the bitterness, Maybe I can do the same with the turnips if I ever find one here.

                              Do you have rutabaga? (Which really is just another kind of turnip.) That works well. I bet parsnips would work too.
