    I love the stuff. And the mock cinnamon apples are absolutely divine served warm with a bit of heavy cream It also works great as a pie filling - that's what I served for Thanksgiving dinner dessert

    BTW, I don't use the water in the recipe. I just simmer it down in the diet cream soda/cider/lemon/butter/cinnamon.

      I am having a hard time finding the jicama lately. Is it out of season or something?

      Im beginning to miss it terribly. :-(

        I found it at a store called Fred Meyer. I usually don't shop there because I prefer to shop at the locally owned grocery store but the fair is going on this week and I live less than a mile from the fairgrounds. People forget they've parked on a freakin' street and I go from zero to road rage in about 2 seconds! Lol! I see jicama all over the place. There is a somewhat large amount of Hispanic families that live in the Willamette Valley. eta~and "old believer" Russian families...we're quite diverse.

              Hey thanks for the recipe.....I think I will make that today. Jicamas are tasty sliced and baked with butter and chives.
