  • Creamed Spinach

    Someone was saying they want to cream some veggies. Here is a recipe I just found and may be helpful. Maybe you can use the sauce to put on other veggies.

    Creamed Spinach

    20 ounces Spinach -- chopped
    2 tablespoons Horseradish -- prepared
    1 cup Sour cream -- or less


    Clean, trim and chop spinach, and cook in a dry, covered saucepan over a medium heat until the spinach is wilted. If you are using frozen spinach, cook to thaw and evaporate all water, then proceed. Stir in sour cream and horseradish. Serve hot.
    NOTE: * Creamed spinach with sour cream -- This is a recipe for a version of creamed spinach that I found that uses sour cream instead of milk.

    Yummy yummy Cher. I use spinach a lot. I eat spinach soup for lunch with a salad on Atkins. I basically prepare the spinach the same, then process it and put it back in the pan with chicken stock and a little heavy cream.

    I also make it with coconut milk and add curry, cut up grilled chicken, tomatoes and caramelized onion. I can't get enough spinach!

    So this version with sour cream and horseradish is definately going in my book! Sounds like a great dip alternative too.
