  • Mock-Cauli Fried Rice

    This is one of my favorite ways to make cauliflower!

    1/2 head raw cauliflower, (grated to make 3 1/2 cups)
    3 green onions
    1 clove garlic, minced or 1/2 tsp garlic powder
    1/2 teaspoon ginger
    3 Tablespoons REDUCED SODIUM soy sauce
    3 eggs, beaten
    Olive oil
    cooked chicken, beef, pork, shrimp, ham, turkey (Your choice of a mix)

    In a wok or large flat skillet, heat enough oil to cover the bottom. Fry minced garlic (or garlic powder) with finely diced white part of onions about 1 minute. Add grated cauliflower and fry for 4-5 minutes, stirring constantly. Add soy sauce, ginger, diced green onion tops, and pre-cooked cubed meat or baby shrimp. Stir to mix well and brown a bit. Push mixture to one side of pan. Add more oil if necessary and scramble eggs in empty side of pan until done but still moist. Stir eggs into "rice" mix and remove from heat.

    Serves 3-4 About 5-7 carbs per serving Stores and re-heats great!
    (Also peas or pods can be added but be sure to add those carbs.)

      Yes it sounds great but I can't get reduced sodium soy sauce where I live. Could I use the ordinary or leave it out altogether? Does it contain more carbs?

          I tried this tonight.. and OH MY GOD.. it was FABULOUS!! By far the best low carb dinner I have eaten yet.. My skinny DH ate it and didn't even know it wasn't real fried rice until afterwards when I told him.. He LOVED it as well.. Thanks very much for this recipe

            I'm soo glad you liked it Triciadotan! I just went grocery shopping yesterday and I made sure to buy some cauli!

            And about the low sodium soy sauce....my label reads 1g carb, 1g protein and 575mg for sodium. (this is per tblsp) with 10 cal. 0 fat. I don't have a bottle of regular soy sauce but on this label it reads that "the average of the top 3 brands of regular soy sauce contain 1157 mg per serving." I'm not sure how it would really taste like "fried rice" without the soy, but, you could try sesame oil instead. My Orchids brand is 129 cal, 0 g protein, 0 g carb, 0mg/100 g sodium, 14 g fat. This is per tblsp.

              Soy Sauce

              I've noticed alot of the cheaper soy sauces have carbs...the fermented Kikoman brand says 0 carbs on the bottle per serving vs 1 or 2 carbs on others. Every little bit helps.

                I made this last night, and please note that I hate cauliflower....but it was AWESOME! I figured I would give it a try and I am so glad I did. I followed your recipe, and added in a bag of Asian Slaw (napa cabbage, celery, and carrots) its like egg roll stuffing stuff. It cooked down and turned out just wonderfully! Portioned it out and having it through the week. Thanks for giving me something new to try.
