Okay, here is the recipe for the Flax Granola Chunks. I saw something online, but changed it to make it tastier. I REALLY like it. It could have been a little sweeter for me. I like sweet
I have heard with diabetics (although I'm better now) that things don't taste as sweet. People have tried things I sweeten and it's to sweet, but it isn't to me...so weird. Anyways, I'll make it sweeter next time. I think I'll use peanut butter next time too...YUM!!! I bet that would make it REALLY tasty!!!
I think it would be DEEELISH if you had it like cereal with that carb countdown chocolate milk!!! I need to get some tomorrow and try it. It made 16 servings and put them in little zip lock bags. It'll be a great little snack.

Niki's Flax Granola Chunks/Bars
Ingredients
Preheat Oven: 250*
Cooking Time: 3-3.5 hr
1.5 cups ground flax (or 2 cups and omit the rolled oats)
.5 cup Rolled oats
1 cup unsweetened shredded coconut
.5 cup Peanut Butter, Natural Creamy (optional...nuts optional too)
1 tbsp Cinnamon (optional)
Sweetzfree to taste (I used 25 drops) or 1/2 cup granular Splenda
1 tbsp Vanilla extract (or other flavor...banana may be good)
6 egg whites
1/2 cup water
Directions
Mix dry ingredients in one bowl and wet ingredients in another bowl. Then combine together and mix well.
Spread in a greased baking dish and bake until completely dry at 250 degrees for 3-3.5 hours. After about an hour and a half take a spatula and make 16 bars. Put back in oven. After 30 more minutes flip them over until finished (If you don't flip them they tend to stay to moist on the other side). They should be pretty dried out.
Cool and store in an airtight container or ziplock bag.
Makes 16 bars
