    OK, so today I made two variations!

    I made cranberry almond:


    And I also made chocolate peanut butter, which are baking now:



    CRANBERRY, per serving:
    248 calories
    17.5g fat
    15g carbs
    12g fiber
    10g protein
    3 NET CARBS!

    Modifications to recipe: ADD 1 cup chopped cranberries, REMOVE lindt chocolate.

    CHOCOLATE/PB, per serving:
    325 calories
    24.5g fat
    18g carbs
    13g fiber
    13g protein
    5 NET CARBS!

    Modifications to recipe: ADD 1/2 cup chopped peanuts, 1/2 cup peanut butter, 1/4 cup cocoa, REMOVE lindt chocolate, pumpkin pie spice.

        I ate one of the cranberry ones, WOW, it was awesome! I didn't sweeten the cranberries at all, so it's a nice mix of sweet and tart. I also tried a tiny chunk of the chocolate PB ones, and they're darn good too. Almost like a dessert more than a health food! They're surprisingly mellow though...I might have to monkey with the recipe additions to make the chocolate and pb flavors more potent...but that would mean more calories and carbs.

          That looks soooo good Julie!!!
          Do you have any other suggestions to replace cranberries (something fruity). I couldn't find fresh ones in the store

            Well, I think you could use strawberries or blueberries, though I'm not sure how the flavors would hold up. The cranberries work because they're so distinct. If you wanted to add "other" fruits, I bet 1/2 a banana would be awesome, just cut it into really small bits and add some banana extract. That would add about 2g carbs to each bar, but it would be a great flavor...and you could substitute the almonds for walnuts. It would be like banana bread!

              Nicole...I made the granola to take camping and it was fantastic!!! It was a great snack during the day between my walks.

              I've got to try these bars next. They'd probably be great for taking with me to class when life is just on fastforward this Fall!

                  It's in the oven as I type! OMGosh, I couldn't stay out of the mix as I was putting it together.

                  I used hazelnuts & organic chunky peanut butter, & cocoa powder instead of the chocolate shavings.

                  I also need to get some liquid sweetner I think. It would mix in better probably.

                  OK, counting down the minutes.
