    This was a favorite appetizer/snack before induction... I have just modified what I eat it on...

    Ingredients
    14 oz canned pink salmon
    8 oz cream cheese
    finely diced peppers (of all colors)
    finely diced onion
    squeeze of lemon

    Mix the above ingredients until smooth. The amount of veggies is up to you. I like the crunch of pepper so I add at least a whole one.

    I have been eating this on pork rinds. I pile up a big tablespoon and don't even notice that it is a pork rind and not a cracker. It would also taste great on celery.

    Can anyone help me with the carbs here. I know cream cheese has some as well as the veggies... but while I could eat the whole bowl... I don't. Maybe about a quarter. It all depends on who is demanding to share with me.

    i dont know about the carb counts, but to substitute onions (such a HIGH count!) I use green onions. low count!! and oniony flavor~!!
