          I'm not a big cereal lover but I did try this a few times and it made a very nice snack. It really did seem like I was eating cereal. It even looks kind of like cereal (Frosted Flakes perhaps?) in the bowl. I came up with a variation of SOFRESH'S recipe that has fewer carbs and uses Da Vinci syrup.



          MOCK CINNAMON TOAST CRUNCH VARIATION
          1 tablespoon heavy cream
          1/4 cup water
          2 tablespoons vanilla Da Vinci sugar free syrup
          1/2 teaspoon cinnamon
          1 ounce coarsely crushed pork rinds, or enough to fill the bowl

          Pour the cream, water and Splenda in the bottom of a cereal bowl; stir well. Stir in the cinnamon. Don't worry if the cinnamon clumps up a bit. Add the pork rinds and stir until completely moistened. Eat quickly with a spoon before it gets too soggy. This version has less carbs and fat than the original and tastes just the same.

          Per Serving: 136 Calories; 11g Fat; 13g Protein; 2g Carbohydrate; 1g Dietary Fiber; 1g Net Carbs

          For comparison, here are the counts for a bowl of real Cinnamon Toast Crunch with 5 tablespoons of 2% milk on it:

          Per Serving: 162 Calories; 5g Fat; 4g Protein; 27g Carbohydrate; 2g Dietary Fiber; 25g Net Carbs

                I have this recipe copied and haven't been brave enough to try it even though I'm really missing cereal now and then. LOL! Does it have a pork rind after-taste at all?

                  Not that I've noticed. They state to cover the rinds well with the cream mixture so maybe that helps. I hear you on the cereal, I can give up most everything else without an issue but I do struggle with cereal. Been good about not cheating since I gave up All-Bran but it's sure nice to have a cereal that is Atkins-safe.

                  Personally, I won't be able to eat this much because of the Splenda but that's ok. All my foods with Splenda are snacks and I really don't need to be eating that many snacks.

                        I had this again yesterday with only half a packet of Splenda. It was still good. Just a note, others have stated on this board that too many pork rinds may make you retain water, so don't go overboard just because it's safe...

                          so i hate and i say HATE pork rinds but i was like..hmmm...i will try one...and wow! it really tastes like cinnamon toast crunch!!! wow..very courageous and inventive!

                            I am a pork rind addict (I actually have always liked them better than chips) so I am steering clear of them for snacking for now. I will probably use the plain ones to bread stuff with though.

                            Gosh, how can a person be addicted to pork rinds? I really am from the South!

                                Best snack so far!

                                I made sure to use very cold water with the cream, and I skipped the cinnamon but used a drop of vanilla extract instead.

                                Cap'n Crunch? Who needs him!

                                Maybe a bit of unsweetened cocoa next time...
