We have tested and tried many variations, and did a double test to make sure.
Cooking........... fine
Cooking and eating cold..............fine
Cooking and reheating............... NOPE! He had a spike after reheating.
I did do the Lasagna and he tested fine.......... but I way undercooked the lasagna noodles and added extra moisture to the pan before I baked it.
Thanks for the info Bren! I've been dying to try the lasagna but didn't cause I was afraid of the "double cooking" I think I'll try it the way you did it! Yum.

I thinkl my low carb pasta is better off left in the cupboard, for now. The memories of how much pasta I was eating 8 months ago leads me not to trust anything that resembles that epicurean experience to go in my mouth. Pasta is not my friend. Do you think a former coke addict would stop after one hit of imitation coke? Better not to chance it if there's any doubt, I think!
MoG, I did a skillet lasagna for my god-children a couple of weeks ago, using the Dreamfields lasagna. They said it tasted fine. I used the recipe at the America's Test Kitchen website and used less lasagna noodles called for (recipe called for an entire box, I only used about 4 or 5 noodles and the kids didn't seem to mind the lack of noodles.)
The noodles cooked in the sauce, so there wasn't any double cooking (so it was very easy.)
