  • What I'm cooking for the weekend

    I know that I am extremely lucky not to have to work in the summer. It's not that I never have worked in the summer - just for the past few years. I know it is not necessarily possible to do a big cooking job right before the weekend to prepare. Might have to wait until Saturday. But here's what i'm cooking today to make sure that I have whatever I want on Saturday and Sunday:

    1. Faux fried apples (fry thinly sliced jicama in a pan with a buncha butter until brown, then add sweetener and cinamon.

    2. Devilled eggs

    3. A container with all the ingredients for a greek salad, ready to mix up

    4. Zuchini fried in olive oil, topped with parmesan, ready to nuke and be eaten.

    5. Broiled chicken legs and wings, spiced up to eat cold or warm

    6. cheesecake pudding (equal amounts of sour cream and cream cheese blended together with vanilla, sweetener and maybe a dash of another flavoring, haven't decided yet.

    7. ground beef stroganoff (mix 1 lb ground beef with an egg and 1/2 cup sour cream. Fry in a pan. Add another 1/2 cup of sour cream mixed with a dash of cream, salt, and nutmeg to taste! Yum! I eat it just like that,in a bowl.

      Oh, I might stop on my way home tonight and get some jicama to fry up like potatoes. I meant to last night but forgot. Hubby makes an awesome dutch oven that has everything that I CAN'T have! :grumble I'm starting realize now that I don't have to go without on this plan!

          It looks like a giant turnip. Has beige or light brown skin. Sorta bumpy and dry (you have to peel it)

            I have never heard of a jicama! Is it at a normal grocery store? :lol

              It IS in a normal grocery store, lol! I couldn't believe it when I first went looking for it. It is one of the ugliest veggies.....but sooo good!

              Look for a big round root vegetable. Light brown in color. Sort of a papery dry skin. Where I live, it's usually on one of the upper levels of the veggies along the wall. Near eggplant and stuff.

                JICAMA, my all time favorite!! I just eat it raw, when people ask what is that? i tell them, a cross between a potatoe and an apple!! I give them a little piece and they LOVE it!! I eat about 3-4 a week! great snack on my second break at work!

                also, how many carbs/calories do you consume a day, on an average?
                I do fit day and my calories are about 1100, no thanks to pork rinds! My carbs are around 15 a day. I also love pork rinds dipped in my home made dressing! which is also good with jicama! Just mayo, splenda, a tad bit of oil and a drop of lemon juice. Its my save all dressing! Last night after I got out of work, came home and was reading and felt hungry! I took a lettuce leaf, cream cheese and pepparoni and rolled it up and it was fantastic!! another new snack! Never tried that before! I love fried ground up hamburger and fried cabbage. That has to be my favorite meal! But I'm eating something that is giving me cravings, and i think it might be the cream cheese! The first day of my craving was a few hours after i ate the cream cheese. But today, i don't have those cravings! So maybe it was my body testing me to see if i would cheat, which i'm glad to say I DID NOT!! WOOOHOOOOO!!

                  I stick pretty close to my bmr of 1694 for calories. I think yesterday I was at 1700. And my carbs ended up being 15.

                  I love raw jicama too! It's sorta sweet!
