I know that I am extremely lucky not to have to work in the summer. It's not that I never have worked in the summer - just for the past few years. I know it is not necessarily possible to do a big cooking job right before the weekend to prepare. Might have to wait until Saturday. But here's what i'm cooking today to make sure that I have whatever I want on Saturday and Sunday:
1. Faux fried apples (fry thinly sliced jicama in a pan with a buncha butter until brown, then add sweetener and cinamon.
2. Devilled eggs
3. A container with all the ingredients for a greek salad, ready to mix up
4. Zuchini fried in olive oil, topped with parmesan, ready to nuke and be eaten.
5. Broiled chicken legs and wings, spiced up to eat cold or warm
6. cheesecake pudding (equal amounts of sour cream and cream cheese blended together with vanilla, sweetener and maybe a dash of another flavoring, haven't decided yet.
7. ground beef stroganoff (mix 1 lb ground beef with an egg and 1/2 cup sour cream. Fry in a pan. Add another 1/2 cup of sour cream mixed with a dash of cream, salt, and nutmeg to taste! Yum! I eat it just like that,in a bowl.
