Just checking in with everyone to see "what's for dinner tonight". If you want to post your supper menu (maybe with a recipe for your main entree), then please pass on your scrumptious meal. (Sometimes I run out of ideas...it is fun to read yours.)

Well, I'm making steak on our foreman grill, unless DH feels like grilling outside. We will have fresh salad and I will have cauliflower. Not the best idea today, but need easy on a Monday.
Sauteed mushroom caps stuffed with shrimp, crab, and cream cheese, and a spinach salad with toasted pecans...er...maybe I'll skip the pecans after last nights mishap, and have an oil and vinegar salad dressing too.
Star...if you see someone peeking through your dining room window while your eating, please don't have me arrested. Would you mind terribly sharing that mushroom recipe? It sounds sooooo good!

Nothing too special but I am going to take out my Showtime rotiserrie for my roast and put a rub on it. I love to just "set it and forget it". It works great for roasting stuff. I will probably have a salad and some green beans to go with it. I figure I can make something with the leftover roast by adding different kinds of marinade or seasonings, like mexican or teriyaki (homemade, of course, with Splenda).
Ok heres my famous stuffed mushroom recipe (well its famous in my family anyway)
Star's Stuffed Mushroom Caps
20 pieces thinly sliced mozza (cut into quarter sized circles or squares)
20 med to large fresh mushrooms
3 to 5 Tbsp cream cheese softened (melted)
1 can crab meat
1 can broken shrimp meat
Wash mushrooms and remove stems. fry heads in butter in a pan or you can spray with olive oil and cook in oven until golden but not mushy. You want firm but cooked mushrooms. Mix crab and shrimp with fingers to break it all up into fine pieces. Mix in enough cream cheese to taste, I usually use 3 to 4 tbsp. Add salt and pepper. Spoon small amount of seafood mixture into each cap. Top with mozza circle. Bake at 350 F til warm then broil til mozza turns a nice brown. Delish!

Some of the easiest recipes are the best I think. I have the crab and shrimp (yup, already started my shopping list) and I'll buy the rest at the store today. Wow...I'm excited.

Let me know what you think, a variation to that recipe is to add a weenie little artichoke heart in the middle of the cream cheese/shrimp/crab ball. Great apps for sports days etc
Steak stirfry w/bell peppers & onions with mock mashed potatoes, and side salad...I live in Idaho, land of potatoes and here I eat cauliflour instead. Baawwhhhaaaaa!
