1 large container sour cream. 8 - 10 eggs. 1 tablespoon vanilla. Splenda to taste. Bake in 9x11 pan at about 375 until set and golden brown. Divide into 8 servings. SErve chilled.

MMM gonna try that, Finelly have you made the brekkie muffins? The ones with egg, cheese, ham, bacon and all that yummy stuff? Thats my morning brekkie every morning. But gonna try yours now, sounds good. I wonder how it would taste with my fave Da Vinci blueberry syrup? And some blueberries....

Im making this tonight, the sour cream thingy. Star is the brekkie muffin recipe in the recipe section here on ADBB? I had it once and lost it. Hubby wanted to try it.
While Star runs to Safeway......... Terry right clicks her way to Netrition for some of that blueberry syrup. Time to make that Da Vinci order..... Hmmmmmm Visa or Mastercard????

Forgive the lack of recipe etiquette tonight, I'm too tired to find the actual recipe. So here goes....
Brekkie Muffins (Droool) this is for 2 to 3 muffin tins worth
18 beaten eggs
lotsa prefried breakfast sausage or ham and bacon (sometimes I use all 3) cut small
prefried green peppers and mushrooms (optional) cut them tiny
grate some cheddar cheese into the mix, enough to taste (or satisfy)
salt and pepper to taste
Grease muffin tins, pour muffin mix in tins 3/4 full. Top each muffin with a thin slice of Old Nippy cheddar or any other strong cheddar cheese. Old Nippy gives it a distinct flavor I love.
Bake 350 F for 15 to 20 mins.
I live on 2 of these every morning for breakfast, they save me!
Tip: We take the casing off the breakfast sausages and crumble the inner sausage meat into the frying pan, breaking it up into bits as it fries, makes for great muffins!

So - I did the sour cream thingy but added 4 scoops of the ultra-low-carb vanilla protein powder and a dash of coconut flavoring, poured everything into a silicone bundt pan. Looks lovely, now I'm waiting for the cake-a-thingy to cool. Will try it for a sunday morning breakfast.
