    Hi Everyone! Geez this forum seems deader than dust, whats up?

    Thought we could start a Xmas goodie thread for some of those scrumptious allowed treats. Just cause I'm not cheating over the holidays doesn't mean I don't want a treat or two thats allowed for myself come Christmas!

    Low Carb Almond Sugar Cookies


    1-1/4 cup almond flour
    1 cup Splenda
    1/4 cup butter, at room temperature
    1 large egg
    1 teaspoon vanilla
    additional Splenda, for decorating




    Pre-heat oven to 350 F. Line baking sheets with parchment paper or a non-stick baking mat. Stir together flour and Splenda. Blend in butter, egg and vanilla until well mixed. Form into 1-inch balls on a cookie sheet and flatten each with a fork. Sprinkle with additional Splenda. Bake for 8 minutes or until set but not brown. Allow to cool for 2 minutes on baking sheet then remove to wire racks to cool.

My husband looked at them when they came out of the oven and made fun of them (butter pooling out looked odd) but he quickly recinded his mockery and declared "hey, these are good!". Take that - whaaa-chaa! Make em - you'll be glad you did. Thank you my new cookie friends!

    This is a great piecrust dough. I have used it for piecrust and cheesecake crust many times, and it holds together beautifully. It makes great cookies, too!

    You MUST roll the cookies into balls and press into THIN circles on the cookie sheet. The cookies do not spread or rise and the thicker cookies do not cook in the middle. Also, I agree with grounding the flour extemely fine. I thought I did a good job, but now think it should have been finer. All in all, a good cookie for those on low carbs. Very sweet tasting!

    A very nice taste. Agree with the previous reviewer that the almonds must be ground VERY fine.


    These are so good!! Even the dough was yummy to eat. I did make a few alterations (added some protien powder and extra butter) but overall, the very best low carb cookie I've ever ate!

    I loved this recipe. My daughter is a Type 1 Diabetic. This recipe met all her needs for a gret cookie she can eat during the holidays. The entire family also loved the taste, and they did not know just how good it ws for them as well. Please continue to create more recipes like this.

      "Clouds" are Induction friendly - you can search for the recipe, I believe it's just cream cheese, vanilla extract and Splenda mixed together, then dropped onto a cookie sheet in little mounds and frozen. They taste like frozen cheesecake. I've heard you want to be careful and see if they trigger cravings or stalls, but it's an easy option if you just want a little treat.

        Here's one of my favorites -- chocolate iced cupcakes

        Soften 2 oz cream cheese for a few seconds in the microwave.
        Blend in 1 tablespoon of heavy cream and 1 egg, beat until smooth
        Stir in 1 tablespoon of flax meal, 1 tablespoon of cocoa powder, and 6 packets of Splenda.

        Divide batter into three muffin papers (if you don't have a microwavable muffin tin, you'll have to make cardboard rings to put around them so they'll hold their shape.) Depending on microwave, nuke for up to three minutes, just until center is set. Pop them in the freezer while you make the icing.

        Blend 1 oz cream cheese, a pat of butter, 1 teaspoon of cocoa powder, and 2 packets of Splenda until smooth. (You can substitute vanilla extract or cherry flavoring for the cocoa, which is also nice.) Ice the chilled cupcakes.

        The total count for the three cupcakes is about 8 carbs. (If you have liquid Splenda you can even eliminate most of those!) Prep time is only about 10 minutes. I sometimes make three in the evening, have one for a snack, if I'm hungry enough to need one, and take one for my lunch dessert the next day at work.

        For those who have absolutely no self control (I'm getting much better) if they went wild and ate all three, it wouldn't be that much damage.

        I will say, though, that this is the kind of thing that I do only very rarely. I don't want that sweet tooth to get into any kind of regular habits, ever again!

            My favorite baked treat is George Stella's Low Carb Praline Pumpkin Pie (linked to the recipe). It calls for a pecan crust but I've never used the crust, I just pour the pie filling mix into a glass pie plate sprayed with Pam. Sadly though, it's certainly one of those "not very often" treats since I LOVE the stuff.

            After that my favorite is Jicama sliced into matchsticks sprinkled with cinnamon and a dash of splenda from a package. Jicama, even plain, is my favorite food ever I think

              Oops, a little mistake in my recipe, above. The number of packets of Splenda was wrong. I've edited and corrected it, now. Just posting this in case anyone might have taken notes earlier. Sorry about that!

                Maple Pecan Pie

                This is my favorite holiday treat

                Crust:
                1 cup finely ground blanched almonds
                1/2 cup Atkins bake mix
                6 pkts Splenda
                1 stick butter melted (1 stick butter = 1/2 cup or 8 tbsp)

                Filling:
                1 and 1/2 cups Atkins pancake syrup
                4 eggs
                18 pkts Splenda
                5 Tbsp butter, melted and cooled slightly
                1 tsp pure vanilla extract
                1/2 tsp salt
                2 cups pecan pieces toasted

                1) Heat oven to 350 degrees. Mix almonds, bake mix and splenda in a large bowl. Stir in butter with a fork. Chill mixture for 20 minutes. With fingertips, press crumb mixture on bottom and sides of a 9 inch pie pan. Bake for 7 mins. until browned and set. Remove from oven, cool. Increase temp in oven to 375 degrees.

                2) For filling, bring Atkins syrup to a boil in a small saucepan. Cook for 10 minutes until reduced by half. Remove from heat and cool to room temperature. In a large bowl, whisk eggs, splenda, melted butter and vanilla. Whisk in syrup. Add pecans and combine well. Pour mixture into pie crust and bake for 20 minutes until edges are firm. Transfer to wire rack to cool.

                Per serving: 10.6 carbs
                3.7 fiber
                total net carbs per slice: 6.9 carbs

                Hints: We use a really deep or wider pie plate as the crust mixture yields quite a bit. If you only have a regular smallish pie plate, you might want to only press in as much crust mixture to fill a little less than half the pan. You will likely have some left over.

                Also make sure you reduce the syrup to 3/4 cup.

                This recipe is delish and we serve it with a dash of whipped cream on top, or a dollop of low carb vanilla ice cream.

                We only make this for thanksgiving and Xmas but its always a hit! No one guesses its low carb.

                I think this recipe came from Low Carb Energy if I'm not mistaken.

                  What a great idea! Thank you Starmaker for starting it. I really need to add the occasional Atkin's treat not is not a frankenfood to my food plan. Something pumpkin is what I'm looking for. I had planed to spend some time Sunday looking for a recipe and now I have two to try.

                    Sugar-free, Low Carb
                    Pumpkin Pecan Cheesecake

                    16 oz. cream cheese
                    6 eggs
                    1/2 cup Maple Sugarfree Syrup
                    1 cup canned, unsweetened pumpkin
                    1 cup pecans chopped
                    3/8 teaspoon stevia
                    1 teaspoon cinnamon
                    1/4 teaspoon ground cloves Topping
                    1 cup pecan halves for garnish
                    1 cup Maple Sugarfree Syrup

                    Serves 8

                    Preheat oven to 350° F. Combine all ingredients, except the topping, in a blender and blend until smooth. Pour into a deep dish pie pan that has been prepared with spray oil. Bake for 50-55 minutes or until the center is set. Remove from oven. Garnish with pecan halves and brush on maple syrup. Chill completely. Serve with or without whipped cream.

                    Total Effective Carbs per cake: 38.75
                    ECC Per serving = 4.84

                      Low Carb Almond Biscotti for Xmas Morning

                      About 2 grams of carbs per cookie.


                      16 ounces sliced, blanched almonds
                      1 cup soy flour
                      1 teaspoon xanthan gum*
                      1 teaspoon salt
                      1-1/2 teaspoons cinnamon
                      1 cup vegetable oil
                      1 cup Splenda or Maltitol Crystals
                      3 large eggs
                      1 teaspoon vanilla extract
                      1 teaspoon orange extract






                      Preheat oven to 325 F. Measure out 1 cup of almonds and set aside. In a blender, grind the rest of the almonds to make flour. Put the almond flour in a bowl, and add the soy flour, salt, baking powder and cinnamon. Mix the dry ingredients together and set aside. In a large mixing bowl, blend the oil and Splenda. Add the eggs, one at a time, mixing well after each addition. Add the vanilla and orange extracts, mixing well. Add the dry ingredients to the oil mixture, blending well. Add the reserved sliced almonds. This will make an oily soft dough. Divide the dough into four sections, and form each section in a small loaf approximately 2 inches wide and 1 inch high. Put the loaves on a large greased baking sheet. Bake for about 40 minutes. Remove from oven, and reduce oven temperature to 200 F. Take the loaves off the cookie sheet and put them on a cutting board. Using a sharp knife, slice each loaf into
                      about a dozen pieces, about 1/2 to 3/4-inch thick. Put the slices back on the cookie sheet, cut sides down. When all the loaves are sliced, put the baking sheet back in the oven for 10-15 minutes. Remove, turn the slices over, and put back in the oven for another 10-15 minutes.

                      These can be stored in an airtight container or in the freezer for several weeks.

                      Note: Xanthan gum can be purchased at health food stores. It keeps the cookies from being too crumbly. It is not recommended that you omit this ingredient. Adapted from a recipe found on rec.food.recipes. Original source unknown.

                        Nancy's Forgotten Cookies, Low-Carb Version


                        2 egg whites, at room temperature
                        2/3 cup sugar substitute (Splenda)
                        pinch salt
                        1 teaspoon vanilla extract
                        1 cup finely chopped pecans
                        1/4 cup finely chopped chocolate chips (sugar-free)



                        Preheat oven to 350°. Beat egg whites until foamy. Gradually add sugar substitute and continue beating until they hold stiff peaks. Add salt and vanilla. Stir well. Stir in pecans and chocolate chips. Cover cookie sheet with foil and grease with butter or margarine. Drop by teaspoonfuls onto the foil. Put in oven then turn the oven off. Leave overnight in oven with door closed.

                              Actually, I was thinking.....

                              Making up a huge batch of bath salts (or some other homemade non-food treat) and then putting them in nice jars is an excellent way to give something homemade to those you love while respecting their particular rung or dietary plan.
