    Yes Cleo we certainly hear you and to be real, I make dainties for so many people at Xmas, what keeps me on track is having one or two sweet (allowed) choices for myself. I don't see anything wrong with this. If you would rather not have this thread, shut it down.

      Bath salts are an excellent idea, I just got a craft book on making massage bars as well. I am going to do that next year for everyone for Xmas.

          By the way, you can take that almond cookie recipe, leave out the vanilla and orange, and use cocoa powder instead. Add some chopped pecans or walnuts -- heaven!

          Star, I'm pretty sure Cleo knows all of us need at least a rare treat of some sort. Why, even 2Big bakes a legal pecan pie for the holidays. She's right, of course, in that we carb/sweet addicts need to learn to focus our celebrations in other directions as much as possible.

                      LOWCARB LEMON MERINGUE PIE

                      Recipe By :
                      Serving Size : 8 Preparation Time 45
                      Categories : 5-10G Low Carb

                      Dessert Pies Tarts Trifles


                      Amount Measure Ingredient -- Preparation Method
                      -------- ------------ --------------------------------
                      Crust:
                      1 cup walnuts -- processed until a
                      powdery paste
                      1 egg white
                      1 tsp vanilla
                      1 tbsp Splenda -- or sweetener of
                      choice
                      Filling:
                      3/4 cup Splenda
                      1 tsp xanthum gum
                      1/2 cup heavy cream
                      1/2 cup water
                      1/2 cup lemon juice
                      4 egg yolks
                      1/4 cup orange juice
                      3 tbsp butter
                      1 tsp lemon extract
                      Meringue:
                      1/2 cup Splenda
                      4 egg whites
                      1/4 tsp cream of tartar
                      1/2 tsp vanilla extract

                      For crust:
                      Whip egg white to a foam, add in other ingredients and blend well. Form into pie crust shape. Bake at 350°F-180°C for 12 minutes or so with another pie pan on it...add weight on top of that. (I use a heavy coffee mug) Remove from oven and let cool.

                      For Filling:
                      Put sweetener and gum into big pot...mix the powders together. Add all other ingredients, turn stove on to medium. Stir constantly until the mixture reaches a boil. Stir 1 more minute or until mixture thickens. Remove from heat, pour into cooled crust.

                      For Meringue:
                      Whip egg whites, vanilla and tarter to soft peaks on medium high speed, then add in splenda in a thin steady stream until stiff peaks form. Spread meringue over hot filling, forming a seal to the pie crust to prevent shrinkage. Bake for 5-10 minutes until meringue browns slightly. Cool completely on rack, refrigerate until ready to serve.

                        Chocolate Rum Balls



                        1 C pecan pieces
                        3/4 C unsweetened dried coconut
                        1 C Splenda
                        2 tablespoons unsweetened cocoa powder
                        3 tablespoons butter
                        2 tablespoons rum
                        2 teaspoons egg white powder
                        2 tablespoons warm water to dissolve egg white powder
                        Makes 24 Candies
                        Preheat the oven to 350°F. Spread the pecans on a baking sheet and roast in the oven for about 10 minutes, or until they begin to brown. Set aside to cool.

                        Meanwhile, combine coconut, sweetener and cocoa in a large mixing bowl. When the pecans have cooled a bit, coarsely chop them in a food processor or by hand. Add the pecans to the coconut mixture.

                        Melt the butter. Mix the rum with the melted butter and stir into the combined ingredients.

                        Put the egg white powder in a small bowl and add the warm water. Beat with a whisk for 2 minutes, until frothy and dissolved. Mix the egg whites into the combined ingredients. Form the mixture into little balls. Leave the candies on a baking sheet for about an hour to dry. Store in an airtight container.

                              I imagine you can, I have only used the powder myself, my chef boy here says 1 egg white in its place, he would know better than I. If you make it, tell me your results and I will add that info to the recipe. I am in goodie H-e-l-l right now making all the baaaaaad squares for my 16 member non low carb family...must...be strong...must...not taste...PMS is gonna hit soon, gotta get these done before that happens. Its truley the only time of the month where I would be perfectly happy bathing in chocolate. Eeep

                                Can't make rumballs... would eat them all.... wait generally I can't make anything in this thread I would eat it all.... Dang I miss tastycake chocolate cupcakes with butter cream filling, thinki'llgo have a pork chop or something....
