ok, i don't know how many of you people do this, or even know about this...

but one of my favorite Atkins friendly recipes is bonless buffalo wings...
(chicken breat pieces, dipped in egg and then into crushed pork rinds... then deep fried)
... but today, i'm trying that with fish. the wife had some Talapia laying around so, the fryer is hot and the fish is "battered"... we'll see how it turns out.

ok, tried the recipe. wow. awesome. you'd never know you were on Atkins. it's seriously just like breaded, fried fish!

    i totally recommend it.

i even sneaked some psyllium husks into the crushed pork rinds...

Oh REALLY! I didn't know we could fry foods. So, it is really okay as long as we batter them properly? ie; pork skins. If so, my husband will be pleased as long as they are just as tasty as the original!

                WOW! Thanks!!!!!

i'll tell you like this... when you use this recipe with chicken... it tastes a little different... but it's really nice to eat "traditional" type foods... ya know.

now, the fish... the fish was just outstanding! i new it would be good... but i didn't know it was going to be that good. i'm very pleased with that experiment.

but yeah, deep frying your food in veggie oil is really no different than say, putting oil in a skillet and cooking like that. so, hopefully you and your husband will enjoy this recipe now and for a long time to come.

edit: BE SURE YOU DO NOT USE CORN OR SUNFLOWER OIL...

Thanks so much. I will try it this weekend. We love fish as well. So that will be another we will try really soon. I asked my DH this morning if he liked pork skins. He said, "no". However,he does kind of like the spicey ones. I'll have to check the carb and sugar count in those. If those are okay I will make it with the spicey kind. He said he will try it anyway

                      Hi again, it's just me!

Well, thought you might like to know that I made the Fried Chicken for my family for lunch. And, everybody LOVED it! I was soooo happy!

I couldn't believe my husband liked it as much as he did. We will definitely be having this on a regular basis! I can't wait to try it with other food even veggies!

                      Thanks a ton!

Cobra Dan, I make the best Chicken Fried Steak, EVER! The non-atkins friendly way though! But today I did it the Atkins Friendly way, just like I did the Fried Chicken yesterday. Just egg and pork rinds. It was terrific.
