    ok that was pretty good...it had the texture of a peeled apple...but tasted like a raw potato with a hint of apple and was so good and juicy...hmmm I wonder if you can fry them dudes like taters? anyone know?

      I cant seem to find jicama no where near me, I have tried kroger, super walmart, biggs, meyers..its still elusive to me.

        Gentle--they never cook down or lose their crunch, so they're not a great potato substitute. Like Miss Phode, I've tried cooking them with cruddy results. Your best bet is to prepare it raw.

          Some people do cook with them, but like Julie said, they never really soften. I wasn't real happy with them cooked. HOWEVER, I love the way they taste raw and am perfectly happy eating them raw, plain, and in salads.

          Cincy, maybe ask your grocer if they'll order some for you?

          Scooter, you asked that induction acceptable question because you had squash flashbacks didn't you???????

            You could throw them in a stir fry if you wanted a crunch reminiscent of water chestnuts. But I'd only throw them in the pan for a minute.

                Yes, it's on induction under the salad list of which you can have 2 to 3 cups a day. I searched some out at the grocery after hearing all the praise of it here on the boards, and I really like it. It's certainly crunchy and sweet. Sometimes you just need something crunchy! And add sweet to it....how great is that?

                  Cincywbbw..........I have the same problem, being from ohio it is hard to find. One day my son and i went on a jicama adventure, about 7 stores and 3 hours later, 2.99 apound. I must admit I went thru the self check out that day and called it a .99 cent rutabega. Thats terrible, i have guilt over it actually. Bad Karma thing. Giant Eagle is where i found them and the one that did not have them said they'd order them for me. Still with the price being that high, its not something i can afford often. The ones here were small ish and after you peel it not much left makes it even more pricey. I love jicama, it just is so elusive here. Lisa
