      mornin all. checking in from work. i went back into ketosis very quickly following my cheat. im so happy i dont have to cut back my veggies now.

        Morning Had a rough couple of nights, daughter and grandbaby are both sick with a tummy virus, thankfully doing much better today. Having strawberries for breakfast, that is soooo fun. Have not been good with drinking enough water. Hubby told me he noticed the water has not been going down like it usually does, glad he is looking out for me. I will get back on water track. Thats my goal for today drink all my water.

          Same here! I was def back in within 24 hours, a relief. I am not cutting back either.

          And my water intake is pitiful lately. It has gotten to where it tastes terrible to me. I'm going to have to push through this because I find water intake more important than exercise even.....

            good morning - it's too hot to sleep here this morning (I have a couple of eastern facing windows $#*^%$) so I'm up.

            Took my measurments (gotta figure out how to work on my hips - like Shakira says "hips don't like") and also have to mosey down to the farmers market in a bit for our farm fresh eggs from Ripon, CA. Poor egg farmers, I can't have them drive all the way out here and then disappoint them by not showing up (ha ha ha - truth is if I don't get there early enough they sell out and bail - where's the loyalty!?).

            Maybe a nap this afternoon?

              Afternoon, everyone! It is a gorgeous day in VA, but my ds is sick with bronchitis, so can't get out much. Will dote on him and work on a scrapbook that I am giving to my mother-in-law for Mother's Day instead.

                It is a beautiful day in my part of VA as well, a bit windy, but still gorgeous. I hope your son is feeling better soon, I used to get bronchitis every year as a child, so I know just how miserable it can be. I did outgrow it though.

                  Thanks, Di! His came on due to allergies. Tree pollen, you know. Since you are in VA, I know you understand. He's got a little more energy today, but will probably keep him home again tomorrow.

                  I used to work in an office where I was the only native Virginian. Every person I knew always told me they NEVER had allergies until they moved here! Jeez...

                    Sounds like everyone was pretty busy today. I am taking a quick computer break while my low carb lasagna is cooking. I haven't made this since last time I was on Atkins, so I am really excited to try it again. I hope it is as good as I remember...

                    Today was weigh in day. I am down another three pounds with a total of 19.2 pounds gone so far. YAY! We met my boyfriend's parents for lunch and his mom kept commenting on how much weight I have lost and how she can really tell. She is such a total sweetheart. After lunch we went to Matthew's sister/nieces' piano recital (his sister is a piano teacher and his three nieces all play). There were tons of dessert choices at the reception afterward -- bars and cookies and brownies, oh my! I just walked away from it all and enjoyed conversation with family and friends instead.

                    (OK, I just paused to take the foil off my lasagna, so that the cheese can brown for the last 15 minutes -- it looks and smells UNBELIEVABLE! Yummy!)

                      It must be nice to get along with your boyfriends mother. My mother-in-law...well let's just say we never willingly are in the same house together. Actually we prefer to not even be in the same town, lol.

                        Yes, I know I am lucky. Matthew's family is great. My family is the problem...

                        Here is the recipe I use for my lasagna -- it is about 8 grams of carbs per serviing, 8 servings.

                        Low Carb Italian Sausage Lasagne

                        1 pound bulk italian sausage
                        1/2 medium onion, chopped
                        1 clove garlic, crushed
                        2 tablespoons fresh chopped parsley
                        1-2 packet(s) splenda
                        1 can (16 oz) whole tomatoes, undrained
                        1 can (15 oz) tomato sauce
                        1-1/2 packages (12 oz) extra firm tofu
                        1 carton (16 oz) ricotta
                        1-1/2 tablespoons dried basil or oregano
                        2 cups shredded mozzarella cheese (8 oz)
                        1/2 cup shredded parmesan cheese, divided

                        Cook sausage & onion in a large skillet (I add mushrooms, also) until sausage is cooked through; drain. Stir in parsley, basil or oregano, splenda, tomatoes and tomato sauce. Bring to boil and then reduce heat. Simmer, uncovered, until sauce is thickened, about 45 minutes.

                        Heat oven to 350 degrees. Slice tofu thinly -- this will be your "noodles" for the lasagna. Mix the ricotta cheese with 1/4 cup of parmesan. Spread one cup of the sauce mixture in an ungreased 13 x 9 x 2 baking dish. Top with slices of tofu to cover bottom of dish. Spread 1/2 of ricotta mixture over tofu. Spread half of remaining sauce mixture over ricotta. Spread half mozzarella over sauce. Repeat tofu, ricotta, sauce and cheese layers. Add 1/4 cup parmesan cheese to mozzarella on top of lasagna.

                        Cover and bake 30 minutes. Uncover and bake 15 minutes more or until hot and bubbly. Let stand 15 minutes before cutting.

                        I love this recipe. It's really just a basic lasagna recipe with tofu instead of noodles. I sometimes will add a layer of spinach between the ricotta and sauce layers for extra veggies.
