      I guess it is good afternoon now. I work second shift and live on a farm so I can't get here until late morning. I did not weigh in yet . I was a little behind schedule feeding the animals and forgot all about it. Do not want to weigh in after breakfast just in case I will weigh more than yesterday when I weighed myself when I first got up.

      I sure do feel better physically on the Atkins plan. All my joint pain is gone and even only after losing about 6 pounds my clothes fit better. MY outlook is a lot more positive than it was two weeks ago.
      I can't wait to try some of those yummy sounding recipes. I have 1/2 acre of pumpkins growing in my garden along with 100 tomato plants. I plan on canning Mexican stewed tomatoes this weekend. They will go into pint containers to be added to soups and for side dishes. Are there any low carb dishes that use peppers? I have a ton of green peppers. I would love a low carb stuffed pepper recipe. Hmm maybe something with cauliflower?

        Good morning! We're off work for 2 days for religious holidays, so we slept in and have been having a relaxing morning. Planning to go to the gym tonight, after a complete rest day yesterday.

        Lynsey, I know what you mean. We all get to that point, and it's hard to shake things up, menu-wise, when you're in a routine and it is easy to just prepare the same stuff over and over again.........

        I think it's time we start our own recipe thread again - lazy people like me tend to not feel like heading over to another website to find recipes - we want them right HERE, in our faces!

        Harlem - wow, hope dh is better, and good for you for staying the course!

        Mand - I am SO jealous that you get to have a personal trainer this month! I'm going to save up to get myself a few sessions later in the fall, I think.

          I have copy and pasted a couple of my favorites from Linda's website:

          TODD'S GREEN BEANS
          1 pound fresh green beans *
          6 ounces onion, sliced thick *
          1 tablespoon oil
          1-2 tablespoons butter
          Salt and pepper, to taste

          In a large skillet or wok, sauté the green beans in oil and 1 tablespoon butter over medium-high heat about 4-5 minutes or until they start to brown. Add another tablespoon of butter, if needed, and add the onions. Sauté until the onions are nice and brown. Season to taste with salt and pepper.
          Makes 4-6 servings

          * You can also use a 16-ounce bag of frozen thin green beans that have been thawed completely and patted dry. I used frozen beans. I used a medium onion plus one small onion to get 6 ounces.

          Per 1/4 Recipe: 126 Calories; 9g Fat; 2g Protein; 10g Carbohydrate; 4g Dietary Fiber; 6g Net Carbs
          Per 1/6 Recipe: 84 Calories; 6g Fat; 1g Protein; 7g Carbohydrate; 3g Dietary Fiber; 4g Net Carbs

          My friend Nancy's son-in-law Todd came up with this recipe and they're very good. This is a simple recipe yet it has a nice flavor that would go well with just about any main dish. You could make this better suited for induction by cutting the onion back to one small one or about 2 1/2 ounces.

          My commentary: Personally, I only like fresh green beans and have never tried the recipe with the frozen ones. Also, I cook it until the beans are actually brown, too. And most of the time I substitute mushrooms in the place of the onions... or use both onions and mushrooms.

          AND

          Loaded Cauliflower

          1 cup cooked cauliflower
          1 teaspoon butter
          Salt and pepper, to taste
          1 ounce cheddar cheese, shredded
          1 tablespoon ranch dressing or sour cream
          1 strip bacon, crumbled
          1 teaspoon chives

          Butter and season the cauliflower. Place in an individual-serving baking dish, then top with cheese. Microwave or broil until cheese is melted. Top with ranch dressing, bacon and chives.

          Makes 1 serving

          Per Serving: 290 Calories; 25g Fat; 12g Protein; 6g Carbohydrate; 3g Dietary Fiber; 3g Net Carbs

          I wasn't trying to pretend that this was a baked potato, but I had the idea of topping cauliflower with all of the things that go on a baked potato. It was quite good.

          As she indicated, this isn't supposed to taste like an actual potato. But the ingredients on cauliflower do taste very good. I have also never tried Ranch dressing instead of the sour cream - the sour cream is soooo good with it.

            Hello everyone! Tomorrow is my final day of Induction, though I am going to continue through September....it just feels like a accomplishment! I need to start trying some new recipes now. You are all doing so great....Keep it up!

              MUP is a recipe I came up with and Blazing named MUP (Mitzi's Ultimate Pumpkin).

              Here you go:

              About the pumpkin - I use Libby's canned pumpkin that is probably located next to the baking items in the grocery store. Make sure to read the label carefully so that you pick up the 100% pure pumpkin and not pumpkin pie filling, which is also made by Libby's and looks a lot like the pie filling, which has sugar in it. Here is the recipe for what I eat:

              In a bowl, I mix 1/2 of a can of pumpkin (which is .88 cups) with 2 ounces of cream cheese. I put this in the microwave for 45 seconds then take it out and stir well. I then add a few drops of liquid Splenda, 2 teaspoons of cinnamon, and 2 teaspoons of allspice and stir. I am past rung 3 in OWL and eating 35 to 40 net carbs, so I also add 1 ounce of almonds, which is about 22 that I cut in half (so I can have 44 nuts ). I then put it back in the microwave for about 50 seconds, stir, and it is done. I find that the warmer it is, the better it tastes. And I really, really love this stuff. Beware, though! This concoction contains 15 net carbs. So anyone who doesn't want to use up that many carbs can leave out the nuts and/or cut back on portion sizes of the ingredients. It is also has a high fat percentage, but I don't stress over that. This makes a lot, too, so you may not need to make this much. My husband always talked about how good it smells when I make it, so I made it for him one day. He couldn't finish it all because it is kinda rich. Cutting this in half would have been enough for him. I always finish mine.

                      Michelle, I hope that it isn't the MUP that's causing your break out. It is entirely possible, though. On a happier note, I'm glad that you found the greek yogurt. Isn't it totally awesome?

                      Lynsey, hang in there. I promise you that if you do, those doldrums will go away. I find that the doldrums come and go at times during this journey, but if we continue on the straight and narrow, they do go away and we continue to feel better and better. I hope that you do find a new exercise passion. I sincerely know that for me, I have to really like the exercise to do it consistently. I had to go through a butt-load of different kinds of DVD's before I finally found something I could stand doing indoors. I finally did, and acutally liking doing it rather than making myself do it has made all of the difference. One of my favorite and most effective forms of exercise has been a routine of floor exercises that I put together myself and do on a mat on the living room floor while watching TV. I knock out 300 crunches and lots of ab, butt, and leg work almost daily this way.

                      Jess - About new stuff in DANDR - yep, I've been re-reading the chapter on Pre-Maintenance. This starts when you are 5 to 10 pounds from your goal weight. It's really quite a different concept to wrap my head around than I have been used to. For example, consider this excerpt:

                      "If you have been racing along the road to your destination, now is the time to put on the brakes. Much as it is tempting to say, 'I can banish these last pounds in a few weeks now that I know how to do Atkins,' I strongly advise you to do something that seems quite the opposite on Pre-Maintenance, the all-important third phase of Atkins. As you advance toward Lifetime Maintenance, my advice is to proceed so slowly that your weight loss is amost imperceptible. I know that this snail's pace can be excruciating when the end is in sight. But remember, getting to your goal weight is not your ultimate goal; your real goal is to maintain that magic number indefinitely."

                      Put on the brakes?! Wow, that is soooo out of my mentality... I have been driven by trying to lose as steadily as possible for a long time. I am committed to doing Atkins by the book this time around, so I am planning to officially enter Pre-Maintenance when I am 5 pounds from goal. I am 10 pounds away from my current goal. And it is very likely that I will lower my goal weight again. (I've already moved it from 140 to 135, then from 135 to 130) When I get to 135, I will re-evaluate and see if it looks like I will need to lower it to 125. Whatever goal weight I end up with, the time for Pre-Maintenance is near and I am trying to prepare mentally. I never thought that I would say this, but I almost would rather continue in "weight loss" mode rather than not... weird.

                      Whatever phase each of us is in, I'm wishing us all a very successful Atkins day.
                      Dearest Mitzi, i am 4 lbs from goal and it's slow for me, i have added a lot of fun foods back in with SF bread and flax seed, different fruits, and i know its going to be slow. I was scared of moving up the rungs, but i survived it, i was scared of pre-maintenance, but i'm ok with it. I also know that if i stayed at 148 the rest of my life, that would be perfectly fine with me, so i'm happy here and i get to eat so much all day long, and so many good nutritious things....this is the first time in my life that I love the way I eat and I love the "no guilt" thing. So wrap you head around the premaintenance, it's not so bad.
                      I would be very disappointed if MUP was ruled out...I was eating a ton of it though, so maybe i can limit it to 2x a week instead of everyday. I stopped eating it on Friday and haven't had a zit since.....i was actually hoping for one so that wouldn't be the case....we will see.

                        I also use splenda for cooking, i dont' know if that is what gave me so many stalls, but i made it through the weight loss slowly and the splenda was worth the sweet taste. I use stevia for coffee as to not have too much splenda, but you can't cook with stevia, it looses it's taste after 170 degrees.
