  • Favorite Induction Recipe/Meal

Hi, this is my second time around, hope to get to know you better.
What is your favorite meal during induction? Or your favorite Recipe, we have a few under recipes above but I know you have a favorite so let us hear it.
About to start Induction. Probably start on Monday, got to get my grocery list together.
This seems like a very nice group. I have been on one that was not encouraging and wouldn't talk to you unless you were a pro @ the Atkins WOE. I may never be so I didn't fit in there. I want to learn make friends and loose weight.

I enjoy about 1/2 to 3/4 cup of cauliflower, a tiny bit of red onion diced up, and a small zuchini chopped up (could use a half, since it's induction), all fried up and then add 1/4 cup of grated cheddar, stir 'til melted, then serve.

          YuM!

            Re: Favorite Induction Recipe/Meal

            Hi, Joy. Welcome to ADBB.

My favorite "induction" meal would be Green Enchilada chicken from Linda's Low Carb recipe site (http://www.genaw.com/lowcarb/index.html ) and a salad

here's the recipe for the chicken:

            GREEN ENCHILADA CHICKEN
4 boneless chicken breasts, pounded flat
            2 teaspoons Seasoning for Tacos
4 ounces Monterey jack cheese, shredded
            1/2 cup sour cream
7 ounce can Green Mexican Salsa
4 ounce can chopped green chiles
            A little cilantro, chopped, optional
            2 green onions, chopped, optional
            1/4 teaspoons xanthan gum, optional

Sprinkle each side of the chicken breasts with 1/4 teaspoon of the seasoning. Heat the oil in a large skillet; sauté the chicken until just done or grill on an outdoor or indoor grill. Don't overcook. Place in a greased 9 x 13" baking pan. Mix the sour cream, green sauce, chiles and cilantro in a small bowl; pour over the chicken. Cook in the microwave on MEDIUM until hot and bubbly. Top each piece with 1/4 of the cheese and return to the microwave until the cheese is melted. Or, bake in a 350º oven for 25 minutes, then top with the cheese and bake an additional 5 minutes until the cheese is melted. Top with chopped green onions, if desired.

            Makes 4 servings
            Do not freeze

                Re: Favorite Induction Recipe/Meal

WOW Thank you all for the lovely welcome!

Lauren: I appreciate the welcome, hope to get to know you better.

Sandy: Thanks for the welcome and the juicy steak and veggie meal idea
You look great, I can tell you dropped pounds keep up the great work
Jimmy: Thanks for the lunch idea. I am so out of touch with this WOE, how do you prepare your egg and chicken salad?
Valid Rouge: Thanks for the welcome look forward to reading and posting on this board. Thanks for the link for Linda's Recipes, I had not 10 min. ago found that, it is a God send. Thanks for sharing your Chicken recipe with me.

I have much to learn. But I do want to get started but need to know what not to do. Like no milk in coffee there fore no coffee for me, I drink it white

Could I ask a question. Everyone jump in or send me to a link to find out my answer.
I guess I need to know "All the Rules of Induction". I am finding there is more
to this than the Induction Food List.

Some recipes/meals I have found have sausage and bacon in them.
Is there a way to find out a name brand on these items. Because sausage has nitrates etc. and so does bacon, plus bacon has sugar.. I have copied and pasted many posts and still have a million questions
I will learn as I go, I just want to make sure I have a clean induction.
Other ????'s, so, no milk in Induction.
What are the limits in protein?
Thank you all for listening. I also want to be a support as well. I can listen and give emotional support.

                  Re: Favorite Induction Recipe/Meal

It sounds like you don't have a copy of the book - you really do need to get yourself one, while this board has a ton of information it supports rather than replaces the book.

No, no milk in coffee - but you can have heavy cream in your coffee, which will be decaff of course.

On the protein, Atkins is a high fat, moderate protein, low carb diet. It is a common mistake to think it is a high protein diet - it isn't. So, especially during induction, you should be shooting for getting most of your calories from fat. That said, during induction, you don't need to worry about protein levels. You may do later, but leave that until then.

www.fitday.com allows you to enter everything you eat and see how much fat, protein and carbs you ate. It is invaluable especially at the start, when you are unused to the measurements and the amounts that you need of various things. You should be shooting for having about 65% of your calories from fat, 5% from carbs, 30% from protein. It doesn't have to be exactly that every day, just there or thereabouts. If anything, while on induction, overdo the fat more than the protein.

The two other important things are:

                  1. Drink your water every day - 64oz (or 2 litres) minimum, though twice that won't hurt!
                  2. Eat your veg. Dr A says that most of your carbs should come from high quality nutritious veg.

The best of luck in your journey - don't forget to get the book!

Welcome, Joy! My favorite is a 2 egg omelette with canadian bacon and cheddar cheese for breakfast.

For lunch or dinner, I CANNOT get enough of this!!!! A burrito (minus the wrap), with shredded beef, cheese, lettuce, sour cream, salsa, and guacamole. Any time I can use the crock pot, I am happy!

Thank you for responding to my post.

Kate ~ I did read from the Atkins Diebetic book and New Diet Revolution. I am not a "book learner" I learn through others experience. It may not be the way others think it should be done. But I learn one way others learn their way.

I cannot pull together how to live this WOL from the books. I hope to get all of your support in my endeavor to learn how to do the Atkins WOL. Maybe at some point, not right now, I'll be able to read and get it by reading the book.

Partytrouble~Thanks for the welcome and thanks for the omelett recipe.
I hope to learn from you and others, and be a support as well.
                      Thanks again,
                      Blessings,

I use Eggs or canned chicken, which is precooked, or tuna, put in celery in a small electric chopper I have, its like $7 at walmart, a lot of 0 carb mayo, maybe a splash of Tabasco sauce, salt , pepper. If I have it in the house, I put a tiny bit of onion and scallion. Its perfectly legal on induction.
Here is a close picture of my chopper:

                            Re: Favorite Induction Recipe/Meal

My favorite recipe is a simple version of stuffed mushrooms:

1 pound sausage (I like sage or a spicy type) browned and mixed with 1 pkg. softened cream cheese and 1/4 cup chopped spinach (I use the frozen kind). I spread 1/2 of this mixture into a large portobello mushroom cap and cover with a couple of slices of smoky swiss cheese and bake for about 20 minutes at 350 (or until cheese is browned). I always make two and freeze the extra so there is always one ready to pop into the oven.

Another easy recipe that uses all the above ingredients but exchange the mushroom for a package of frozen cauliflower is another family favorite....

Cook cauliflower according to package directions and drain. Mix it with a package of softened cream cheese and a pound of browned sausage. Spread mixture into a baking dish and cover with thin slices of smokey swiss. Bake at 350 for 30 minutes. Again, this dish freezes extremely well and is a great last minute meal. I have made both these dishes with other approved vegetables mixed in (onion, spinach, squash, artichokes, etc.) and it always turns out very yummy. Good luck!

Go to the 14-day induction thread, there is a few stickys that point out what you can and can't have and more information. Where did you get your information the first time you did it?

                              My favorite items for induction:

Salads - with turkey, bacon, hb egg, a little shredded cheese and ranch dressing

Hamburger mixture, season and add broccoli or cauliflower and top with cheese

Egg salad, chicken salad and tuna salad - eaten with salt and pepper or on a salad

tilapia - pan fried with garlic

chicken - baked chicken - yumm and you can have the skin!

My new favorite omelette - tomato, broccoli and cheese!

                              You can do this!! Welcome!!
