    I'm always on the hunt for new dishes, and what better way than to start a thread and ask!

    So, what did you have for dinner this Wednesday night?

    We had a cold spell push through, so hubby cooked gumbo. Hmm.. rice? delima. Solution? Mashed, cooked cauliflower to make faux rice! It works. The cauliflower soaked up the juices and took on their flavor.. so it was really like eating rice. It was soo good. Even my youngest did it. MMMM.. I'll have to check the carb count on the roux... surely it is not that much. No bloat, no guilt... feeling content. Chicken, sausage and egg gumbo! I love living in the south

    i ate a taco salad (- taco)with all the yummy fixins. also made a couple jalepeno peppers stuffed with some cream cheese.

        I fried up some hamburger and onions and steamed some cabbage and put the hamburger mixture on the cabbage, it had a feel of stuffed cabbage leaves....minus the rice...I am thinking of adding a lite (low sugar) tomatoe sauce over the top next time....
        I also put chopped bacon over the top of cabbage and toss, it's very much my new meal!

          We had ham steaks (I know, probably not the best choice) and mashed cauliflower.

            I had stuffed hamburgers (two small hamburgers pressed together with grated cheese & jalepeno's stuffed inside) & some fried cabbage - Yum!!

              I make this all the time jess! i call it cabbage roll stir fry . I put browned hamburger, onions, dices canned tomatoes and a bit of s/f tomato sauce in the pan and heat it up. once simmering i add the cabbag and cook till tender. i top with a tbns of sour cream. I think actually i may have that for lunch today!

              Last night i had meatballs and salad. Tonight I have a beef brisket in the slow cooker with some onions and red wine.

                MMmm, poppers. Can you tell me what type of peppers to use? I looked yesterday and there must have been 5 different kinds to pick from at my store. I don't want to bite into a fire LOL

                  We had shrimp scampi, zucchini mix with parmesan and a small dinner salad - was awesome!

                    I had an omelette with broccoli, tomato and cheese - it was delicious and filling!

                      Good afternoon everyone. I know it is a little late for me to be writing in here, but it has been a very busy day today.

                      I made the Spinach lasagna last night and it was GREAT! I recommend it to everyone to try. It was just what I was looking for. I also had a little extra left over and tucked it in an omelet this morning. Oh my lord it was so good. I gave it out at work today like to four people that dont even care about carbs, but they wanted to try it. I guess I made it sound so good they couldnt resist. So by all means...

                      okay so it is that tom and I am in complete misery. You know i get so crabby before I get it that I pray for it to just happen so I am not ugly anymore... and then when it does come YUCK! I wish I could be just put away somewhere for a week so I didnt have to deal with the world.

                      I got on the BALL last night and started exercising. That took a lot let me tell you. I did get on there for 30 minutes though & tonight I am going roller skating. I mentioned to Jimmie that I was going to do the ball, but forgot about skating... that is exercise right? A few loops around should do the trick if my feet can handle it.

                      Well guys today has been a short one I will have to catch up on everyone tomorrow.
