  • Coconut Oil

    I've read some interesting things as using this as a supplement. Does anyone else use this? How much are you taking? Is it a waste?

    I bought some today and ate about a teaspoon of it. Although it was tasteless, the smell was divine and I think I liked it. It just melted in my mouth.

    I was hoping it would straighten out the plumbing , since nothing else I have tried is working in that dept.

    Any information, ideas or thoughts would totally be appreciated!

      I love coconut oil. It has really amazing benefits. It is the only oil that does not become trans fat when heated, so it is much healthier for the body and aids in weight loss. Olive oil even becomes trans fat when heated so I've read it is best cold as a salad dressing and coconut oil is better for cooking. I also love the smell of it. I used to add a little of it to my morning smoothies (before I was on Atkins.) I always cooked with it, but haven't purchased any lately. Thanks for the reminder. I need to get some.


      It is nice seeing a picture where I actually have a neck!

        I'd like to hear more. What are the benefits? I grew up hearing that coconut oil was the worst kind of fat and we read labels to avoid it! I can't quite wrap my mind around the fact that it may be good.

          I use it, though I'm out right now (thanks for the reminder!) It's sometimes hard to find - I got mine at Whole Foods, which is sooo far from my house! Trader Joe doesn't usually carry it, or Henrys.

          I love it. I can't remember the benefits except that it's supposed to aid in burning fat. Very good for you. (Coconut is bad for you if you are on a low fat diet - that's what you remember about it!)

          It's wonderful for almost everything. Fry up some jicama in it. You can make chocolate "bark" with it - cocoa powder, coconut oil, splenda. Melt, spread out on a sheet of waxed paper, chill, and even a small corner will satisfy you.

            Colleen I'm going to go off topic here for a bit, you had asked yesterday in the roll call thread about 5htp, here is a thread i started about it quite some time ago http://www.atkinsdietbulletinboard.c...ad.php?t=49823 You have your private messaging turned off this is the only way i know to alert you to it. For the record I had to stop taking 5htp, as i couldn't stay awake all day, couldn't get up in the a.m. etc. it was turning me into a zombie. If you do decide to try it i would start will a really low dosage and work your way up.

            For coconut oil.

            You want the type that is solid at room temp, and not the liquid kind. And it's best apparnetly to get extra virgin organic. I have used it for cooking and i too liked it, i used it mainly for health benefits that i read about, though i can't say i really noticed anything different (was using it daily). I haven't used it lately as it's very expensive...but i did like it. i buy a chepaer non organic one to use as a skin moisturizer as well. it's amazing!

            The Facts: Excessively heating olive oil will evaporate the alcohols and esters which make up its delicate taste and fragrance. Heating olive oil will not change its health aspects, only the flavor. Use a cheaper olive oil which doesn't have much flavor to begin with if you want to fry with it, add a more flavorful olive oil after cooking or at the table.

            Olive Oil Myth: Heating a cooking oil will make it saturated or a trans-fatty oil.

            The Facts: As far as making a saturated fat, according to Dr. A. Kiritsakis, a world renowned oil chemist in Athens, (Book - OLIVE OIL FROM THE TREE TO THE TABLE -Second edition 199, all oils will oxidize and hydrogenate to a tiny degree if repeatedly heated to very high temperatures such as is done in commercial frying operations. Olive pomace oil and virgin olive oil are both highly monounsaturated oils and therefore resistant to oxidation and hydrogenation. Studies have shown oxidation and hydrogenation occurs to a lesser degree in olive oil than in other oils. But in any case, the amount of hydrogenation is miniscule and no home cook would ever experience this problem.

              There's a whole site about the benefits of coconut oil, I'll use it on some salads from time to time myself. My wife loves cooking with it, since our son can't have gluten or dairy, she's found that using coconut oil really adds some flavor to some of the recipes she's converted.

                I've used coconut oil to make that bark/fudge, except I'd also add peanut butter to it. Add hazelnut butter and it tastes like those seashell truffles. DANGEROUS! I had to throw it out because it was so addicting...

                ...and because I figured out I'm sensitive to coconut! WAHHHHHHHH!

                  My mouth just watered thinking about the Godiva seashell truffles!! I best keep away from the bark recipe too - that reaction has to be an omen that it will be a trigger food for me.

                  Good idea about frying Jicama in it - maybe it could be used to stir fry chicken & veggies, etc. too? I've never tasted coconut oil - does it "go" with meats & veggies?

                    BENEFITS OF Coconut Oil

                    Hope this helps with what the benefits are. I did get this info from several websites. Below is a fantastic website with a ton more of info.


                    Coconut oil is an edible oil that has been consumed in tropical places for
                    thousands of years. Studies done on native diets high in coconut consumption show that these populations are generally in good health, and don't suffer as much from many of the modern diseases of western nations.

                    Coconut oil was once prevalent in western countries like the United States as well. With a long shelf life and a melting point of 76 degrees, it was a favorite in the baking industry. But a negative campaign against saturated fats in general, and the tropical oils in particular, led to most food manufacturers abandoning coconut oil in recent years in favor of hydrogenated polyunsaturated oils that come from the main cash crops in the US, particularly soy, and contain trans fatty acids.                         I guess that doing the right thing or the healthiest thing is subject to which doctor we want to listen to. It gets so confusing sometimes. I have a book by a doctor that states all the scientific reasons why olive oil should not be heated. How do you know what to believe? How do we know that coconut oil is really good? *sigh*
