    TGIF!

    Tonight I'm making chicken and shrimp kabobs with red, yellow and green bell peppers, onions and mushrooms marinaded in soy sauce, garlic, smoke flavoring and lime juice. Add rice for the kids plus a green salad.

      i am having a big bowl of egg drop soup. can't wait!!! i use low sodium chicken broth, a splash of soy sauce, a splash of sesame oil, some white pepper, ginger, scallions, and eggs. mmmm!!!!

        awwww yesssssss! I LOVE that stuff! I drank a lot of that in the winter last time I did atkins I also love to melt brie cheese in some broth... add some cream.. canned chicken (or leftover chicken) green onions.. MMMM Thanks for the reminder.

          Oh geez that melting brie chix soup sounds YUMMY!!! I might have to try that? Any guesstimates on how much I should use of brie and the cream?

            I had shrimp, 1 yellow squash sliced, spinach, and bean sprouts sauteed in butter with half a roma tomatoe and as a snack home made crustless pumpkin pie.
            1/2 package creme cheese, 1 1/2 cups of plain pumpkin, 6 packets of splenda, 2-3 eggs, 2 tsps pumpkin spice.

            1)melt the creme cheese in the microwave then add 3 packets of splenda to it
            2)mix pumpkin spice 3 packets of splenda and eggs together
            3)mix pumpkin mix and creme cheese mix together
            4) makes 6-12 cupcake pies or 1 big round pie pan pie. Cook on 350 until toothpick comes out clean. It took mine 40 minute for big pie. Am trying cupcaks next time.

              Hmm, good question! I'd have to dig through books to see if I measured and made notations. You could make individual servings and see how much it adds up to. I'd go with a cup of broth, 2 oz of cheese and a few tablespoons of cream, tasting until it gets how you want. I used a carton of broth, triangle of brie and about... 1/4 cup of cream, if that. Add in a can of chicken, some green onions.. MMMM. When I was having a hard time getting all my veggies in, I'd use broth, canned chicken, celery, bell pepper, onion, and anything else I had laying around.. a homemade chicken soup kinda thing. I'd sip it when hungry or use it as soup with my rolled up lettuce leaves with lunch meat. Now I"m hungry LOL

                  Shrimp Cocktails (low carb ketchup, horseradish and Tapatio hot sauce)
                  Veggie platter (celery, cucumbers, bell peppers and cauliflower w/lc ranch)
                  Deli platter (cheese cubes, various meat slices and crackers for the kids)

                      Tonight I'm putting a whole chicken in the rotisserie.

                      I stuff butter, salt, pepper and fresh rosemary springs from my front yard under the skin and inside the bird, then stick it on the rotisserie for like an hour or so.
                      Green beans
                      and I'm going to attempt to make mashed cauliflower since I made the kids mashed potatoes. we'll see how it goes.

                                I baked a chicken and it was yummy!!! MMMM.. The kids kept calling it a turkey since it was a whole bird. To them, chicken is breasts or thighs/legs LOL Had wax beans on the side. Today I have to cook green beans. Daughter wanted those and I wanted the wax beans. The leftovers will be served with green beans to make her happy.
