  • Finally bought a crockpot - anyone got any good recipes?

    Hi
    After reading the 'what's for dinner?' thread a couple of days ago, I went out and bought a crockpot.
    Does anyone have any good recipes?

      I am a very inexperienced cook, and one of my goals for 2008 is to branch out. I've had a crock pot for 10 years, that I may have used twice. I love the idea of crockpot cooking, so this thread will help out a lot.

      C'mon you cooks out there... help out your kitchen-challenged friends.

        Thanks for the recipe. Can you enlighten me?!! What is Rotel? Is it tinned tomatoes? I have never heard of it here in the UK. x
        PS I left you a note on the roll call today to say what an inspiration your weight loss is as your start weight is pretty much the same as my start weight.

        Mitzy - Dust off that crockpot! I have just bought a crockpot book so will have a look thru for any good recipes. I just wanted the STACers recipes too.
        Your pictures are amazing too! I love this site. I bet you were so happy to see that ticker finally reach and then exceed goal! Good for you xxx

          Crockpot! MMM. Let's see. I usually go through the crockpot cookbook and just leave out the things that are carby. Fajitas! MMM Strips of meat (I buy tougher cuts) and add 3 tablespoons soy sauce. Cook on high 6-8 hours.. then sautee onions and peppers on the stovetop. MMM The kids love it too!

          Cut meat into cubes, add beef broth to meat, cook until tender. Add onions and bell peppers.

          Soups! Meatballs in sauce.. I think Linda's site has a recipe/instructions.

          Chicken. Roast. Chili.

          Rotel is a name brand for diced tomatoes with green chilis. Adds some "fire" to your food

            rachel is correct. rotel is basically a can of diced tomatoes with green chilies. you could use just a small can of diced tomatoes if you wanted, without the green chilies, but they add a lot of flavor. thanks for your message on the roll call today!! will reply there.

              I LOOOOVE my crock pot!!!! I do a pork butt roast just about every other week. Throw it in, add salt pepper, splashes of soy sauce, garlic and salsa. Sometimes I substitute the salsa for a jar of pepperchinis. I use it for stew (add veggies) or shred it for tacos for the family and keep the left overs in the fridge to snack on.

              Crockpot Fajitas
              Recipe Number: 1878
              Contributor: Mary


              Serves: 6
              Carbohydrates Per Serving: 9.5
              Preparation Time: 10 minutes
              Difficulty: Easy

              Ingredients: 2 lbs Beef flank steak
              1 C Chopped onion
              1 green sweet pepper, cut into thin slices
              1 jalapeno pepper, chopped
              4 T Cilantro
              4 Cloves garlic, minced
              1 t Chili powder
              1 t Ground cumin
              1 t Ground coriander
              1/2 t Salt
              1 8 oz Can chopped tomatoes
              12 Low carb tortillas

              Toppings (optional): sour cream, guacamole, shredded cheddar cheese, salsa
              Cooking Instructions: Cut flank steak into 6 pieces.



              Combine meat, onion, green sweet pepper, jalapeno pepper, cilantro, garlic, chili powder, cumin, coriander and salt in Crock Pot.



              Add tomatoes. Cover and cook on low for 8 to 10 hours or on high 4 to 5 hours.



              Remove meat from slow cooker and shred. Return meat to slow cooker. Stir.



              To serve fajitas, spread meat mixture into low carb tortillas and add toppings if desired. Roll up tortillas and serve.

                Fabulous! Thanks guys.

                I love chillis - the hotter the better as far as I am concerned. I don't think you can buy tomatoes with chillis here (will check tomorrow) but I can just slice some up and through them in.

                  I think this is one of my favorite posts to date! Now In addition to everything else I'm going to have to buy a crock pot... Only problem is they come in two sizes... I think I'll get the smaller of the two!

                    Ohhhhhhh.... I'd so love to have a crockpot, but can't buy them here. Was in London a couple of weeks ago, and hugely tempted to bring one back, but the airline is soooo antisocial about baggage weight, I decided against it.
                    First time someone comes over in a car though.....

                        Thats a nice site! Some of the recipes made me wonder how they could be low carb though. The first one wants low fat ingredients and potatoes! Another recipe has flour in it! Definitely things that will need to be modified.

                        I'm not much of a crock pot cook - I dont have the patience for it lol

                          That's funny, I didn't even look at the recipes, just thought "Oh cool, I'll have to check it out" and yep there it is plain as day... "potatoes and carrots and Low fat something or other"

                            Crockpot Rotisserie Chicken

                            Make some aluminum foil balls and place in bottom of crockpot. Take a whole fryer rub with some olive oil, garlic and sea salt or any seasonings you prefer. Place chicken on top of foil balls, cover and cook on high 4-6 hours depending on size of bird.

                            I love making a roast chicken this way because it tastes just like the kind you get at the grocery deli and because of the foil balls, the chicken roast nicely and stays whole without falling apart.

                            I LURVES MY CROCKPOT!!! In fact I bought a roast to make in it this week.

                            POT ROAST
                            I put some onion quarters in bottom of pot, take a roast make little slits here and there with a small knife and place garlic bulbs in slits. Put roast on top of onion quarters (I usually put celery in the bottom too) Add 1 envelope of Lipton Onion Soup mix and two cups of water and cook on high 4-6 hours. ENJOY!

                              Oh but that's the great thing about crock pot cooking is when you're gone for the day, you can pop in a roast in the morning and when you come home at night your house smells wonderful and you have dinner all ready! I don't have the patience much either to cook in it if I'm home because I can't stop myself from checking on it and that's one thing you shouldn't do is keep lifting up the lid.

                              Oh this is for Zarabelle: DON'T LIFT UP THE LID WHILE COOKING IN A CROCK POT. When you do that you have to increase your cooking time 1/2 hour because you lose that much heat especially if you're cooking on low. The beauty of a crock pot is that you don't have to keep checking on it, you just forget about it until your meat is done.
