Finally bought a crockpot - anyone got any good recipes?

    Speaking of potatoes with your crockpot roast...since we are lowcarbers and can't have potatoes I've found THE next best thing! Get some radishes and put in the bottom of crockpot along with onions and celery. The radishes lose they're red color and look like little baby potatoes AND they soak up all the roast flavoring oh man they are awesome! I totally forgot about that! Gonna have to pick up some radishes now for when I make my roast on Wednesday!

        Two easy recipes:

        BBQ pork
        1) Buy a boneless pork roast (I prefer a lean cut) and put in crockpot.
        2) Cover with a bottle of LC BBQ sauce (or homemade SF sauce). Fill empty bottle with water and add to pot.
        3) Cook 6 to 8 hours.
        4) Drain off liquid.
        5) Put back in crock pot and shred meat with fork. Add another bottle of LC BBQ sauce. Mix and serve!

        Pepperoncini Roast
        The pepperoncinis give this great flavor and it turns out really tender.
        1) Buy beef roast of your choice.
        2) Cover with two large jars of Pepperoncinis, including juice (mini hot peppers)
        3) Cook 6 to 8 hours.
        4) Serve!

          Oh this does sound super yummy though! I love radishes! Might just have to try this one day

            Oh yeah that does make a difference! LOL! I once cooked a turkey breast in the crockpot at night because I was gonna be gone all day and night the next day and wanted dh and ds to have a nice meal and not eat take out. Well I swear I could smell that yummy turkey roasting in my sleep! LOL!

            PS. Congrats on your pants not fitting! I can't wait to drop a size, I have about 3 pairs in the next size down that have been hanging in my closet for over two years that want me to put them on again!

              Thank you very much! I now have 2 pairs of pants and 1 skirt that I can no longer wear because they are much MUCH to big. I cant wait for my next decent pay check so that I can buy some new clothes!

                  Hi Guys

                  Sorry about that site being rubbish. I also didn't actually look at the recipes (blush) just came across it and took it at face value.

                  There are some great recipes and tips (love the radish idea - yummmm) on this thread which are genuinely low carb. Funnily enough, I bought a low carb cook book that recommended using tapioca. I had never heard of it so ordered it with my shopping and it's 86% carbs!! What a waste of money.

                  The meatballs were delicious. If anyone wants the recipe, please let me know.

                    Keep in mind when searching for recipes, not every low carb plan is Atkins, and many people are just doing 'lower carb'.

                    Just because you are following atkins does not mean you can never have a potato again (yes i realize most here can not have them now..but just keep that in mind!). In maintenance i can have them occaisionally no problem.

                    My favorite thing to cook in my crockpot, which i only recently discovered is beef brisket. I cook it with quartered onions, add some fresh ground black pepper and about 1.5 cups of red wine (you can sub beef broth if not at alchol rung). Cook for 8-10 hours on low, and it literally is falling apart when it's done. It's awesome!

                    Also, to make a stew in a crockpot, turnips work awesome in plae of potatos. My husband cant tell the difference.


                    We actually could get low carb potatos here for a while, not sure if they're still around? I never did try them http://www.sunfreshofflorida.com/html/nutrition.html

                    14g's net carb per potato compared to 24 net for a regular one.

                        OK, I made it up (after looking at several recipes) and so here goes:

                        2 cans chopped tomatoes (the ones you can get over in the states with chillis would be great). I know they contain a fair amount of carbs but this recipe makes five portions.

                        several mushrooms chopped and quartered
                        1 white onion chopped
                        3 cloves garlic chopped
                        italian dried herbs (1 tspn)
                        Lots of ground black pepper
                        sprinkling of salt
                        some roasted or raw red bell pepper
                        1 teaspoon splenda (optional)
                        Splash of dry red wine (optional)
                        I put in two chillis (one red and one green and it was not enough so would at least double this or you can use the tomatoes with chillis).

                        For the meatballs

                        2 pounds of minced beef (I used 90% lean as all the fat stays in the crockpot and I don't like it too fatty personally).

                        1 teaspoon onion granules
                        2 teaspoon garlic granules
                        2 eggs (beaten)
                        half teaspoon of dried basil
                        salt
                        pepper

                        Place the tomatoes etc in to the pot (I would also add some red wine next time).

                        Use wet hands to mix all meatball ingredients together and make golf ball size balls. Drop uncooked balls in to tomato mixture. Give a gentle stir.

                        Cook for 7-8 hours on low. I served with spinach, cheese and sour cream and they were delicious.

                        I hope you like them. I was very impressed and found them very filling. This amount makes 5-6 portions and so you can freeze some leftovers for a quick microwave meal when you're short of time. xx
