    Is anyone else freaking out about Easter?? I got my kids a ton of extra candy to go in their baskets and we have to go to my family's and then DBF's family's to eat on Easter. Just thinking about it makes me nervous. I'm already making my mind up that I WILL NOT eat any candy and that I'm going to take my food and have a legal day no matter what! (That includes people trying to stuff me with carbage and telling me that I'll be fine if I eat that stuff as long as I watch my portion size.) How are you guys managing Easter?

    I will probably smell all of it to get the yummy aroma then chug my water. I just did that with some popcorn the family made and it actually worked.

      My kids are older so their baskets are filled with DVDs, gas cards, McDonald's certificates and some candy I don't like

      I'll be making dinner so it will be completely on plan.

        That's the truth!

        I'll be with my bf's family on holiday but they know I'm dieting so I don't expect too much pressuring to eat chocolate! My bf gave up chocolate for lent so I suspect that even if I do get some chocolate from someone he will be happy to take it off my hands on Easter!

          Luckily, we don't have any family in town, or within 3 states, ( )so we don't have to worry about going over to anyone's house for Easter Dinner.
          As far as the kids and candy goes, I love chocolate and I know I can't have it - plain and simple. I eat it, it ends up on my butt. I don't want that to happen, so I don't even bother stressing about it - candy is a no-no.
          Be strong, eat your yummy, good for you, will not end up on your bootie food, and you'll be fine

            To be honest, no, I'm not worried about Easter. I've made a commitment to myself about how and what I'll eat, and making that commitment alone has simply ended my cravings for crappy foods. After 2 months of really committing to atkins this time (last time I did it, but I always viewed it as a short term fix, not a way of life) I just no longer want any of that crap. Not even as a treat.

            I wish I could explain better how my thoughts changed, because my heart goes out to everyone suffering cravings and falling off the wagon because that one piece of chocolate turned into 10 pieces and some cake.

            It's not a matter of staying strong, it's just a simple choice. And you know you can make a simple choice.

              Well, I'm going to eat chocolate truffles. Shocking I know.

              But not really, they are homemade, low carb ones. I am making them for a few people, which I do every Easter, they are very popular! Before being on Atkins I would some sugar, now I just use Splenda and they are every bit as good (I made some at Christmas too).

              They are made using this chocolate and this cocoa, which are critical because they are not only extremely good but the lowest carb of any chocolate I know of. Along with the chocolate they contain cream, butter, vanilla essence/rum essence/other flavourings and and some but not much splenda. Some will have nuts also. They work out when made at an average of less than 1 carb each (but I count them as one) and are delicious but extremely rich so you couldn't eat many.

              They do feel evil to eat though.

              Other than that, I'm the cook, so it's business as usual.

                  lol...evermind....and then there's passover, right?


                  I normally freak out about the holidays, but I haven't had a minute to even put out the Easter candles or usual momentos of the season for our family because of classes and teaching, so I have no fear of it all. And hubby's cooking dinner so I won't have to hang out in the kitchen!

                    I went to a Passover celebration last night. It was so very interesting. And, yes I did indulge in food that I shouldnt have. But, I was thinking... hey, this is Passover and I want to experience it... all of it. So, I did. My friend that I was with was very concerned about it not being a low carb event. I told her it was ok because it was one meal. And, I don't feel like I cheated because afterall, it was a religous ceremony.

                    The Easter treats will not be a temptation to me at all. My kid loves those peeps things. Ughhh. No problem avoiding those for me! I have always found them to be disgusting. Cadbury eggs are my ultimate all-time favorite candy. I love those things!! This year I see them staring at me in the store...and I just walk on by.

                    We will go out for an Easter dinner. But, I can always find something on the menu that is "legal."

                      I'm with Snap on the Cradbury eggs - it just occurred to my husband that I can't have any this year <sigh>. I do love them and the best part is everyone else in the house thinks they are nasty! However they aren't coming in my house this year.

                      I'm not freaking about Easter because - well it will just be the kids and me - my husband works and I don't have to go anywhere. Maybe I'll make a small ham - not sure yet - hadn't really thought about it. But got the kids a chocolate bunny, some "whopper" mini eggs, a set of portable battery operated speakers for their iPods ($5 on Amazon), and McDonald's coupons. So that's more than enough - heck my daughter JUST finished the Hershey Kiss my husband gave her for V-day and I think he ate 1/2 of it!

                        Aloha Kate,
                        The suspension is killing me! Would you share the recipe for these chocolate delights?
                        I'm still on induction so I won't risk it over Easter, but I would love to try them out some other time.

                          My bf and I are going out with my mom and my sister to hometown buffet for easter dinner. Lots of legal food and I dont have to cook!

                          My mom, even though she knows I'm on atkins, asked what kind of easter candy I wanted. Told her no candy for me but she could get me some Easter Almonds

                          Not big on the peeps or the cadbury eggs. Reese's peanut butter cups were my vice... mmm things with peanut butter

                            This recipe I found on the modified atkins for seizure control website.

                            1/2 cups butter, melted
                            9 eggs
                            3/4 cup sifted coconut flour (I use Bob's Red Mill)
                            3/4 tsp baking powder
                            1/2 cup coconut milk
                            Sweetener of your choice to = 3/4 cup sugar
                            3/4 tsp salt
                            1 tsp vanilla

                            Mix butter, coconut milk, eggs, sugar, salt, and vanilla.
                            Combine coconut flour with baking powder and whisk into batter
                            until there are no lumps.
                            Pour into a greased 8x8 cake pan
                            Bake at 350 degrees for 35 minutes or until knife inserted into
                            the center comes out clean. Cool and ice. I use cream cheese
                            heavy whipping cream and sweetener to pipe over cake or whipped
                            cream.

                            My coconut flour has 24 carbs in 3/4 cup and my coconut milk has
                            2 carbs in 1/2 cup which = 26 carbs in all. I cut my cake into
                            8 = pieces and so I figure that there ends up being 3.25 carbs
                            per slice.

                              Why do we feel we have to give our kids candy for the holidays? My kids use to get a chocolate bunny, a few jelly beans, a new Spring outfit & then some small fun stuff. Try not to make the holiday about the food but about the time spent together.
