Re: Turkey - I braised the gobbler breast (on the stove top, in a big heavy frying pan, in broth, with onions and herbs) so - while delicious and tender - the skin was, alas, flaccid, not crispy, which is lovely, I agree. On the plus side, all the fat rendered out into the marvelous, fragrant broth, so there is that. Next time (probably Thanksgiving) I do intend to roast it and the skin will be crisp, golden and - oh joy! oh rapture! - ALL MINE!! Bwaaah! *insert evil cackle*
