    Because the batter is so darn good, I eat by the spoonfuls and don't have much left for the muffins.

    And then...

    I KNOW how much better they are cold than when they are hot but doesn't EVERYTHING taste better fresh out of the oven so I have to have one warm and THEN I have to try one once they cool off so by the time the whole situation is over I have basically just eaten two blocks of cream cheese, a half a cup of Splenda, two eggs and a dash of vanilla. Sigh.

    Shew, I just love run-on sentences.

      That was it. I just take two blocks of cream cheese, two eggs, 1/2 cup Splenda, splash of vanilla extract. Mix it all up real well and then bake it in paper muffin cups for about 30 minutes at 350. Tastes like little mini cheesecakes.

        Yes and that is why I never make them either! Mmmm. Cheesecake! I feel your pain here. I would do the same thing.

          Now they are in the fridge YELLING my name!!!! I'll never make them again.

          I usually just put a couple of ounces cream cheese, a spoonful of spleda and some flax meal in the microwave. Yummmm.

            You guys are funny. I have the same problem with my husband. When I make them he eats them fast.

            I simply lick the mixers and I only make these while I am making dinner. I prefer them cold, but have been know to eat them warm (with cinnamin they taste like cream cheese pancakes).

            I try to make them last for 4-5 days so I can have 1 every day. I make 12 they should last for 12 days right? Hubby eats the rest.

              Have you tried gagging their little mouths before putting them in the fridge? That should shut them up!

                    Duct tape??? Sock??? What do you suggest???? They are very loud!!

                    Look them up on the recipe board. There are tons of variations. I've made them with unsweetened cocoa powder for little chocolate cheesecake. Or some low GI peanut butter. Or putting some SF raspberry jam smack dab in the little hollow in the center. Seriously, I won't make them again for a while. I don't have the self control.

                    Last summer I made them during a strict induction and I ate one per night. How??? No, really, how did I do that? I don't know that person anymore. :-(

                    I need to find her again.
