    Tonight:

    Spicy Asian Style Beef Soup (serves me)
    1/8 pound thinly sliced beef
    1 cup chicken broth
    1 cup beef broth
    1/2 teaspoon ground ginger
    1 garlic clove sliced into quarters
    Veggies:
    1/2 cup bean sprouts
    1/4 cup snow peas, slivered
    1/4 cup slivered carrots (I'm in OWL, use an Induction veggie instead)
    1/4 cup green onions, slivered
    1 teaspoon chili oil
    1 /2 teaspoon toasted sesame oil
    salt and pepper to taste

    Combine the chicken broth, beef broth, ground ginger, and garlic in a pot and bring to a boil. Boil for 1 minute then reduce the heat and simmer for 15-20 minutes.

    Meanwhile saute the beef until medium rare. Set aside.

    Add the veggies, except the green onions, to the broth and simmer until the are tender-crisp. Remove from heat and add the beef and green onions. Stir and add the chili oil and toasted sesame oil.

      Roast chicken with a small coleslaw (made with cabbage, a little onion and iceburg lettuce) Yummmm!!

            I have a class tonight, so I'm stopping by my favorite mom-and-pop burger joint for a burger. I have a salad ready for me at home. So when I get home it's eat and run to class.

                My cabbage pie - which is layers of cabbage leaves(snip out the thick centre veins)/ground beef(browned and seasoned)grated cheese/aubergine slices(eggplant) topped with a large cabbage leaf and baked in the oven for about 3/4 hour covered with a sheet of baking foil. When all soft and cooked I remove the foil and sprinkle a couple of Tablespoons of cheese and pop under the grill.
