    If you are not going to have thieir dressings (either because you dont like them or because you are not sure their ingredients are on the allowed list) you still need to be eating some fat or oil with them to help counteract sugar spikes.

    If the chicken or other meat already has fat on it (chicken skin, fat on pork etc) you dont need to add any more, but if it was skinless chicken not cooked in fat as grilled would be you would have been better to ask for some olive oil and vinegar to mix your own dressing to drizzle over the salad, or a big dollop of butter to put on the chicken if it is hot enough to melt it.

    Lots of us buy (or acquire) those small sachets of 'legal' dressings to take with us or a small leakproof container filled with our favourite dressing.
    I always have a few of these plus a couple of small butter pats (as well as some green tea bags and sweeteners) for instances like this in the glove compartment of the car.

      ok I never thought of that, I thought I was getting enough fat during the day and didnt need to worry about it for this meal.

        Good for you asking and getting educated about how to do it correctly

        think about yourself as a car engine that runs on Atkins ratio fuel. if you get no fat fuel on a fill up your engine will not run right just as a sports car fueled with regular will not run right. try to have some veggies some fats and some proteins at every meal. Also when you eat out as many folk just discovered restaurants can and do serve meats and chciken thewt gas been injected with sugars and toher things in solution to make then juicer in the processing. Ask for the nutritional info about your food before you eat it so you know what is in there.

            Yes.

            Sometimes meat is injected with a sugar-salt solution. The solution helps to keep the meat juicy (so the cooks/chefs can overcook the meat without really ruining it or the restaurant can pre-cook a large quantity of meat and "hold" it without the cooked meat drying out too much)

            So always ask how the food is prepared. This is especially true if you opt for Chinese food. Sometimes the meat is coated with cornstarch (which protects the meat during the high heat cooking process and helps to retain its moisture). Sometimes the meat is marinaded in a sauce that contains sugar. Sometimes they add a little sauce during the cooking process to add flavor and to help steam the food cooked.

              Why is it that I thought that mushrooms where high in carbs ?
              Do they not belong in list #2 ? Please correct me if Im wrong. (Dont have the book infront of me...

                  there are a few higher carb mushrooms but the catagory mushrooms is on the 2 cup list.
