    Re: Favorite Dish For Induction

I like the Biker Goddess Pizza recipe, breadless Reuben, taco salad and chicken dipped in some mayo and fresh Parmesan baked in the oven. I also love seafood.

Lots of great recipes and food ideas. Thanks for sharing everyone!!

I'm a big fan of the stuffed peppers from Linda's site (but I use salsa instead of tomato sauce, just to kick it up a little). I also love the stuffed jalepenos. You could always do chicken wings and use celery as your veggie . I'm a big fan of the taco salad.

I also make the breakfast muffins below:

1 dozen eggs (I usually end up using 10 eggs)
      1 package of breakfast sausage
Shredded cheddar cheese (or cheese of choice)

I spray a muffin pan with Pam spray and preheat the oven to 350. I brown the breakfast sausage like you would ground hamburger. I drain and then fill the muffin tins about 3/4 full, then add shredded cheese to the top of each muffin. Scramble the eggs and pour the liquid over each muffin. Bake for approx. 20 minutes.

This sounds like a nice idea. I wonder if you can freeze the leftover muffins?

I'm not sure Kat. I haven't tried that. DH and I both eat them, so we actually run out mid week, lol. If you try it, let me know how it turns out.
