    that's the thing about ATL with your bbq pits, more than likely if you're renting, the complex has this thing about NO grills. how do you work that situation MommaGlass? I would take my meat and grill to the park and grill up and freeze a lot for later.

    atkins_again, make sure you let us know about the bbq, don't forget

      Yeah, we rent, and my DH works as a service manager, so we can't break the rules, either. Some folks in the neighborhood grill anyway on their deck or patio. We would be in mega trouble if we did.
      There was a grill by the front pool we could use, but some fool threw it in the pool and made a wreck of it and it was never replaced.
      I have a George, but it just aint' the same, man, just ain't the same.
      We will be grilling for Mother's day at a park, I may go with your advice and bring extra took cook and bring home to freeze. Good idea.

        girl, not a fool! You cracked me up with that one Melinda. But, some people do have a serious problem. I was going to rent a place in College Park, and when she told me I couldn't grill, and I would have a patio area downstairs, I decided not to rent. I don't like all that control. So yeah Mothers Day is your day to get your grill on. Let us know how it goes. OMG I could see one drunk fool doing that too (the grill in the pool), too much.

          Hi everyone!

          As expected, the BBQ went smashingly. We started at 3pm and just finished about 10 mins ago (it's 11:55 pm). We had about 15 guests and just had enough food for everyone. Oh, and everyone loved the food!

          I made bbq skewers with: 2 beef cubes (marinated* in soy sauce w/ 0 sugar 0 carbs, cilantro, anise, salt, pepper, garlic and extra virgin olive oil), alternating with yellow/red/green peppers, mushrooms and eggplant marinated in olive oil, fresh ground pepper, salt, parsley & basil. Each one of them was eaten, even the ones that my hubby burned, haha! We also grilled some tomatoes with smoked gouda (yum!), and more grilled eggplant & peppers as sides. Our neighbor smoked a huge pork shoulder for 8 hours, which I was also able to eat. Also made a cobb salad w/ baby spinach, hb eggs, bacon, tomatoes, mushroom with a variety of dressings on the side (I had it w/ oil and vinegar). For our non-dieting friends, we made bbq burgers, chinese chicken salad (w/c a friend made), and for dessert they had mousse & upside down pineapple cake. I had some standby salmon filets ready for grilling in case any extra guests or latecomers came, but fortunately we had enough food for the last arrivals. For drinks, we served soda, wine, beer, rum, whiskey and mezcal.

          What did I eat? I had 4 skewers, 2 tomatoes w/ melted gouda, 3 slices of the smoked pork, and a small helping of the cobb salad. I have to work out how much fat/proteins/carbs/overall calories I ate, but my bbq meal basically covered dinner & lunch, so I think I didn't go overboard w/ the servings. The hardest part for me was saying no to all the good wine, but I brought down (2) 1.5L of water, which I finished by the end of the night. (How many oz. are in 1L?) I didn't have time to go to the gym or do yoga today, but I figured all the running around (grocery shopping, preparing food, and bringing food and utensils up and down from our 2nd floor condo to the ground level backyard) counted as exercise, haha!

          * EDIT: forgot to mention that I didn't pick up the liquid smoke since my neighbor said she had it, but later couldn't find it. No biggie. The marinade turned out great anyway, but I'll definitely try it for the next bbq

            I'm sooooooooooo happy for you atkins_again. I mean the way you described it was like a movie, I could see it all unfolding, you're a good story teller. I like the idea of you incorporating fun, eating right on plan, and getting a lil bit of exercise in too. WEIGH 2 GO!!!!!!! You utilized your self-control around those desserts, that means you want this baaaaaaaadly! BTW, the food sounded delicious, I wish I was there to enjoy . I'm glad your marinade worked out fine too, that was your main concern, and with 0 sugar and no/low carbs you did great!!!!
