    catfish grilled with cajun spices, green beans, and cole slaw
    June Goals
    1. Continue with water
    2. Use bike more (3x per week would be nice).
    3. Continue with videos.
    4. Go to the YMCA for water classes.
    5. Build stamina for more walking.


    Goals for May:
    1. Water every day - at least 100 oz.
    2. Walk through Wal Mart instead of ride.
    3. Post every day.
    4. Get the exercise bike out of basement and use it!
    5. Re-read DANDR! It's been too long.

      We had bratwurst with roasted broccolli stalks and red peppers.
      The broccolli stalks are easy - just boil the stalks till almost soft then cool and peel them, then toss/coat them with oil and some spices and bake till crispy.

        That sounds yummy Elizellen... I usually peel the stalks first, but reckon it must be easier to do it after cooking. Tks for the tip!

          Tonight:

          Stuffed tomatoes: cut the top off a tomato, hollow it out. Season the insides with salt and pepper. Then stuff it with chicken salad. Top with cheese, bake, until hot. The insides can be used for salsa.

            hmmm
            i've never had broccoli stalks... and I would have never thought to peel them... sounds interesting!!

            I had pumpkin mashed potatoes and tongue tonight.... and a spoonful of custard and cheesecake

                Chicken stirfry with some chinese 5-spice powder, sesame oil, cauli-rice, shredded cooked chicken breasts and omelette strips!!!

                  I'm having friends over tonight and we're probably just going to order in. They'll be having pizza, I'll be having ceasar salad and chicken wings.

                      Aww, look at you, lookin' out for me! Thankfully this place doesn't bread their hotwings, it's just plain wings with hot sauce. I don't get the concept of breaded wings anyways, they always get soggy by the time you're ready to eat them.

                        I love Wings and Ceasar Salad. That's my favorite lunch!!
                        I think I'm doing Chicken breasts stuffed with broccoli and Cheddar cheese, wrapped in bacon. Probably potatos for the boys. And some roasted cauliflower. Yummm. I am hungry! Just back from working out!

                          man Barb that sounds good. How do you make them?

                          I'm having chicken thighs either baked or grilled out on the grill if I can stand the heat and some faux mashed taters (as my dad called potatoes).

                            Hamburger patties and collard greens with butter. Simple, but it satisfies.
                            No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

                              So simple! Take boneless skinless chicken breasts, slice them down one side to make a "pocket". Fill with fresh broccoli and cheddar cheese, wrap with bacon. I brown them a bit in a frying pan and then throw them in the oven. Sooo good. My guys love this!
                              Here is a pic. The chicken was leftover. I sliced it and put it in the microwave to reheat.
                              LOL I just realized this is going to be a "repeat" menu. I had roasted cauliflower last time with this too!

                                Here is the cauliflower, posted in that thread also.
                                Then there is roasted cauliflower!
                                Cut up the cauliflower into flowerettes. I put it in a glass cake pan. Slice up a stick of butter over it, drizzle with olive oil. Add chopped garlic and onion. Bake in 350 degree oven about an hour or til done to your liking. (Stirring occasionally) I like mine pretty brown and crispy around the edges.
