Re: what do you pack for lunch

Party... I work in the worlds worst office. There is enough tension that outsiders are aware of it. we had a luncheon for cinco de mayo and I made what I could eat and ate only that...... I was asked repeatedly by one woman (thats SO not the word I ever use for her) if I wanted dessert. She finally honked me off bad enough that my boss next to me shot me a look and wagged his finger at me under the table. I didnt say I was doing atkins but she did ask if I was doing lowcarb so I said I was. She proceeded to go into a dramatic tirade about how I was killing myself blah blah blah. I finally had enough and told her that I would let my general practioner and my nutritionist know that she didnt approve and asked what medical school she graduated from. Needless to say, she shut up. Stand up for yourself and how you are taking care of yourself. Women are the cattiest creatures on earth. Dont let someone make you feel bad for what you eat. Look at what they eat. Bet if they are dieting its something thats not good.... dry chicken without skin or plain tuna etc etc. Honey we get BUTTER!! and full fat ranch dressing! Not to mention a slab of beef and the GOOD cheese (that fullfat stuff!). poo on them. Just keep in mind that they are likely jealous because you are looking fabulous. its how a lot of women are.

Now food.... Soups are fun!! make your own. a great way to get your veggies in. lettuce wraps are awesome- tuna and pickles and maters- BLTS etc etc.

Keep your chin up. You are doing this for you, noone else

Re: what do you pack for lunch

Hello. It is my first day on induction, but this is what I brought to work. I am a cook at Red Lobster by the way - so in general - my co workers look at me as if I am crazy for not eating lunch at work.( It definitely helps that I am allergic to seafood ! )

I took three Romaine lettuce leaves and put a couple of slices of turkey, a thin slice of avacado, a piece of bacon, a 1/2 slice of swiss cheese and a tiny bit of Mayo - rolled them all up and ate them like a Taco. I got comments from people at work about how good they looked.

Tomorrow I am having a grilled chicken breast cut into strips, sauteed with some bell pepper and onions, and placed on top of 1 cup of lettuce with a touch of cayenne pepper, paprika and olive oil. It's like a chicken fajita salad.

        Hope this helps.

Mmmmm. Your turkey rollups sound good Sunflowr. I had a "club" salad today. Lettuce, tomatoes, chicken, bacon, grated cheddar cheese and mayo. Way better than a club sandwich.

Are you able to do any bulk cooking Party? You can look in the recipe forum here or over at Linda's lowcarb (sorry, I failed "Links 101") and find recipes for casseroles and such. I often make things on the weekends to freeze for during the week. I have to make one or two family sized meals, but you could divide it up into smaller containers and freeze them and have lots of meals. Then you can make a salad for lunch, say, and grab a "frozen dinner" for dinner later.

I had some chicken salad a little earlier and now this snack:

3 olives, 1 stalk celery (1.5 carbs), Philadelphia Neufchatel cheese (<1g carb), 3 slices Oscar Mayer smoked turkey breast (0g carbs), spicy mustard for dipping.

Re: what do you pack for lunch

I usually pack baked fish and broccoli or string beans for lunch. Sometimes I will have a "meat" salad, with chicken, tuna, turkey breast, salami, and pepperoni with a handful of cheese, eggs, crumbled bacon, and lettuce. You just have to learn how to make it into a variety.

Re: what do you pack for lunch

I love making "sandwiches" with green leaf lettuce, mayo, mustard, slice of cheese, some sort of meat, and a tomatoe. Tastes BETTER without the bread IMO.

They can be kinda messy, but mmmm so good! No one has said a WORD to me about what I eat. In fact, I haven't said anything to some of them, but I am noticing they are starting to eat more like me.

I'm lucky that I work at a place that has a FABULOUS cafeteria where I can always find SOMETHING for lunch even if it's a salad with egg, cheese, meat, etc.
