      1. Don't quit!

      2. When you cook, cook "basic" food. Post your food problems in the Food and Chat forum of this board. Lots of foodies over there who will be able to help you low carb your foods.

      3. Don't quit!

      4. Make sure you have "legal" food around you. Did you know that Dr. Atkins doesn't say you have to eat the veggies on the "salad list" raw? I'm not that familiar with authentic Mexican food, but I know European Spanish food has several cooked preparations for peppers and other "salad veggies".

      5. Don't quit!!!!!!!!!!!!!!!!!

Re: Screwed up so Bad !!!!!

Now I am not an expert here by any stretch of the imagination (I'm still figuring all this Atkins stuff out for myself--lol) but maybe there was something you ate that caused a shift in your blood sugar?? Something maybe you didn't even think of that could have caused you to wobble in your WOE? If you were keeping a food log, I'd look over it to see what you might have eaten that could have caused you to slip and then just cut that food out altogether.

I'm doing induction now and following the program to the letter killed my cravings for everything. I love all Italian food and consider myself to be a pretty good Italian chef--but if I went to make an Italian dish now, I wouldn't be tempted to take a bite because I am just not craving and I don't ever feel ravenous. The same thing with sweets. I love them. I can't ever stop eating them if they are in the house. But I went to the market yesterday and got the kids some stuff they wanted--and I haven't even thought about any of it since I stuffed it in the cabinet. And it's not because I am mentally blocking the fact that it's in the house--it's cause I seriously just don't desire the stuff.

I don't know, I could be wrong?? Don't give up. You CAN do this.

Re: Screwed up so Bad !!!!!

          Hi,
I know you say you`ve screwed up, so here is my attempt at encouraging you!! Today is my fourth day of induction, and my TOM just began (I am a sucker for using illness/pain to eat lots of dark chocolate and french fries ), and I have private students who like to take me to yummy restauraunts and force-feed carbs down my throat . But, I just try to nibble and eat the things that I know are OK, and exercise! I try to walk everywhere or ride my bike all over town (if any of you are familiar w/living in Japan or a city where this is favorable over driving you will understand) Drink a looooot of water and put it behind me. So, I hope you aren`t beating yourself up too much over it.
Enough of that `pep` talk. Here`s my take on the Mexican:

Mexican food is my all-time faaaaavorite food! Well, besides good-old southern BBQ. I`m living in Japan now, so access to both is quite limited. But, I can buy cilantro, avocados, limes, and spices.
So, whenever I`m craving Mexican, I will just whip up my version of induction-friendly eats.
--Guacamole: Just an avocado mashed (but I like mine chunky) with a little bit of chopped onion, a couple cherry tomatoes cut up, and if I have fresh garlic, I will mash it w/salt, if I don`t, I will use powdered. That with salt-pepper to taste is delicious!

--Salsa: Just chop half and onion, some tomatoes as well, add chopped cilantro (corriander) and salt-pepper to taste. If you like, you can add lemon or lime juice.

--Taco meat: I cook ground beef with some packet taco seasonings, or if I have cumin, garlic, etc. spices that are listed on the packet, I will just use those and not the packet (and I think it tastes better than the packet version) and cook the beef that way. You can do chicken the same way. Or shrimp etc.

I make a meal using Romaine lettuce leaves as my shell, fill with meat, cheese, sour cream, salsa, tomato, black olives, jalepenos, etc.

Or, line a small casserole dish w/eggplant, throw in your seasoned meat of choice, some canned tomatoes, cheese, cheese, cheese, and bake until its all gooey. I never measure this, just try to get the water out of the eggplant first (by salting it, placing something heavy over the top to press the water out) or it will be watery. YUM!

I hope this helps you and that I haven`t pissed off anyone who knows how to REALLY cook good Mexican.

Don't quit. Just call it the practice for the real thing.
              Okay, what can we have
              Chorizo and eggs
              Migas
Taco salad ( no chips) but it tastes just as good without. Use jicama as the crunch
Fajitas - again no tortillas but you wont miss them
              Carne Verde ? Hummmmm
              Jicama
              Chili sin frijoles
              avocados
Mission Tortillas have a low carb version that you'll someday beable to use.
Salsa (just double check the label for sugar)
              Pico de Gallo
              Cheese
              Chicarrones con salsa or without
OMG, I am making myself hungry.
Oh one more. Chili rellenos, but without the breading that some folks use. I stuff them with cheese, and then place them in a small cassarole dish and cover them with an egg batter and bake. Oh yummm, My mouth is squirting.

              41 pounds down and counting

Re: Screwed up so Bad !!!!!

I just found out that I was doing Atkins wrong this entire week, and let me tell you i've given up some great food. but i've also given up on myself too many times. like for instance, when i found out that i had been doing it wrong, i totally carbed out today, garlic bread, frozen custard, and pizza...i was pretty mad and i'm an emotional eater, anyways, i said at 5:00pm i'm starting atkins again, and doing it correctly. I'm committed to it. Just don't give up. take a 2hr break so your body can digest, then start again, and stick with it. you can do it.

Re: Screwed up so Bad !!!!!

Please notice how you are talking to yourself Guilt is never empowering.

                    I can just slap myself!

Would you talk to your child or your pet this way? You are your own best friend. Always speak with kindness to yourself. You had a difficult moment, now you are back on track.

Becoming an Atkineer means changing your entire lifestyle. If you want to cook high carb foods, Hispanic or otherwise, its time to stop. No more carbage!

There isn't a gray area here. And if carbs aren't good for you, and you know they aren't because you gain weight on them, then they aren't good for your family either. Healthy food for everyone from now on. And back on induction with your next bite.

And surely there are low carb hispanic dishes on the net. Take the initiative and find them. Substitute, substitute, substitute.

You can do this. Make your health your number one priority. I can't think of anything better to model for your family than good health and committment to an Atkins lifestyle.
