Confused about cooke spinach.... please help

  • Confused about cooke spinach.... please help

    Can I eat cooked spinach in induction I know you can eat raw spinach but does it make a difference if its cooked? ... I prepared a spinach, shrimp, tomato and cheese casserole and would hate to have to get rid of it.

    Please help

    Spinach is allowed as one of the other salad veggies during Induction. Eating fresh is best because of the nutrients and vitamins it has.

    However, I have to think (and read) more about your question of carb content between the fresh/frozen/can...my mind says they're all the same, but part of me is questioning that because of recently reading the molecule break down of fiber when cooked.

    Ps...enjoy your spinach dish...sounds great!

      Veggies are veggies, if they are cooked or raw! Enjoy! I LOVE spinach. I have it almost every morning incorporated into my scrambled eggs with some sort of meat and cheese!!
      Check the Food chat too for some spinach ideas!

        I absolutely love spinach but i make sure that if im going to have it cooked that i measure it out raw first.
        Its one of those veggies that cooks down significantly and the carb count can easily be underestimated.

          You can eat any veggie on the acceptable foods list raw or cooked. In fact, cooking improves the flavor of some of these vegetables, imo. The only precaution is that the veggie that cook down significantly must be measured in the raw before cooking. Since spinach is listed on the "other" list in DANDR 2002, you need to measure 1 cup of it raw, then cook it. When you move to OWL phase, spinach measured cooked will be an acceptable vegetable.

            Thanks guys , I was a bit confused ... I did measure it raw actually I measured all the ingredients raw and once the casserole was cooked I divided into 6 servings for the week, It comes out to about 6 carbs per serving... all veggie carbs

              So, are you going to share that recipe with us? It sounds yummy. Oh and you said "all veggie carbs" Don't forget to count the cheese and shrimp carbs! Yep cheese and shrimp both contain carbs!

                what if you only buy frozen spinach? i never buy fresh because i'm the only one that eats it....i usually buy it frozen in a bag (chopped spinach) and measure one cup of that, then chuck it in the pot....guess thats not right either?

                    Yay, I'm glad you took pictures! WE LOVE PICTURES OF FOOD HERE!

                    I make frozen spinach and simply add some cream cheese after it's good and hot... Mmmmmm!

                      If you start with boxed or canned, the carbs and corresponding serving size should be listed on the label. Then you can go by that. On induction, your spinach allowance will need to be under 5g's woth per day.

                        A cup of raw spinach ends up as about a tablespoonsworth once cooked, so if you are using precooked spinach you will need to use only a small amount so as not to exceed the 3 cups of veg in total.

                            Here goes... Keep in mind this was an experimentation

                            Spinach, Broccoli & Shrimp Casserole

                            Ingredients:
                            1 medium tomato
                            2 1/2 C broccoli
                            2 C spinach
                            1/2 C chopped onion
                            1 tbsp garlic
                            1 C chopped celery
                            2 C shrimp salad (I would have preferred regular shrimp but didn't have any on hand)
                            2 Slice turkey bacon
                            1 C Shredded cheddar cheese
                            1/2 C Shredded mozarella Cheese
                            1-2 tbsp heavy cream
                            1 tsp butter
                            salt
                            pepper
                            oregano
                            basil
                            cayenne pepper

                            Directions:
                            1. steam broccoli for about 1 minute (just to defrost it a bit, dont want it over cooked)

                            2. steam spinach for about 1 minute, drain water and set aside

                            3. Cook bacon in skillet, remove once cook and set aside

                            4. Saute onions, garlic and celery in bacon greese (Not much grease to saute in since I used turkey bacon, but you may add oil or butter)

                            5. Add drained spinach to skillet

                            6. Crumble the cooked turkey bacon and add to skillet

                            7. Add shrimp, broccoli and seasoning to taste... set aside

                            In seperate pan
                            Over low heat Combine, butter, heavy cream, 3/4C cheddar cheese, and 1/4 cup Mozarella cheese (could also add an egg to this mixture it will help bind the casserole together)

                            8 Once the cheese has melted pour into the skillet, mix well

                            9 Pour into a casserole dish

                            10. Slice tomato and spread evenly over the casserole, sprinkle remainder cheese on top the tomato

                            11. Cook at 350 for about 30 minutes

                            If I added correctly it came out to be about 38 carbs total... I divided the dish into 6 servings = 6.3 total and 5 of which is veggies

                            I will try to add the pics tomorrow... the pc is acting up and I have to go pack my bag for the gym tomorrow and to prepare tomorrow's lunch box

                              I'm not sure about buying it frozen, you'd have to read the label. I was shocked to see that the frozen broccoli that I've been eating for the last two months had 2g of sugar added to it. I had been reading my labels carefully (or so I thought!) and just never imagined that there'd be sugar in broccoli. Fresh is best!
