    Re: What's for Dinner Tonight?

Something with extra lean ground beef.

I use to buy the regular stuff with the fat and all, then we grilled the extra lean and I've been hooked (spoiled) on the awesome flavor of almost total beef. It's like eating a steak...okay, a cheap (really), cheap steak.

    Cabbage
    Diced tomoatoes
    Ground beef

    hmmm...maybe some stuffed cabbage...

I looooove ratatouille! But I have to be very careful with any kind of tomato-eggplant dish----my crazy body reacts badly to that veggie combination and I could eat an entire stadium of ratatouille if I don't watch it.

Caponata with lots of good olive oil is yummy too!

Well, that's a really good foundation for many dishes....

Use Italian herbs and top with cheese, you'll have a noodle-less lasagna thing.

Use chili powder, cayenne and top with a cheddar jack, you'll have a Tex-Mex kind of dish.

Use curry powder and you'll have an Indian or Carribean type dish.

So that's a lesson for everyone reading this thread looking for ideas---don't be afraid to experiment with different herbs and spices!!!!!!!

Refrigerator surprize with fresh tomato. It's time to clean out the fridge when an unopened pack of beef franks is found in the door, mouldy.

Thanks Megs! I actually did end up doing a tex mex deal. Spicy, with mexican cheese. So good. I also exercised good portion control and counting of carbs, savings extras for breakfast! I'm making progress

I spend part of the morning at a Farmer's Market and bought a whole bunch of yummy fresh veggies. I also stopped by the Wharf and bought some nice seafood.
