    does anyone know if this root vegetable is induction friendly? i do know that it is low in carbs, it is also not popular in north america- but here in europe it is and i would like to try it, thanks.

    so i just deep fried thin slices of this vegetable in olive oil and added s and p. it was really good, don't know if i can describe it, not like a potato, not really sure. but it had a slightly sweet taste to it which was nice with the salt and pepper. it was a nice change anyway, give it a whirl!

    I believe it's part of the "other" veggies that are induction friendly, the ones that you can have 1 cup per day. I've never eaten it before, what is it like?

      You can have one cup per day of these veggies if salad does not exceed two cups. The following vegetables are slightly higher in carbohydrate content than the salad vegetables:

      artichoke
      celery root
      pumpkin
      artichoke hearts
      rhubarb
      asparagus
      chard
      sauerkraut
      bamboo shoots
      collard greens
      scallions
      dandelion
      snow peas
      bean sprouts
      dandelion greens
      spaghetti squash
      beet greens
      eggplant
      spinach
      broccoli
      hearts of palm
      string or wax beans
      broccoli rabe
      kale
      summer squash
      brussels
      kohlrabi
      tomato
      bean sprouts
      leeks
      turnips
      cabbage
      okra
      water chestnuts
      cauliflower
      onion
      zucchini
      If a vegetable, such as spinach or tomato, cooks down significantly, it must be measured raw so as not to underestimate its carb count.

        thanks for the info! i went to my atkins bible and it is indeed in there, i assumed it wasn't because it is not a very popular vegetable in north america.
        julirama, i have actually never tasted it before and thought i would give it a whirl- i am hoping to make some sort of chips with it.

          funny you should ask Destertthorn posted a topic about recipes for that veggie just this week. use the search feature and please add your chip recipe when you get it.
