  • What's for dinner tonight?

    Great way to get some menu ideas -- tell us what you're planning for your Induction dinner tonight!

    For me

    2 boneless pork chops stuffed with cream cheese, garlic, black olives*
    1 cup steamed cauliflower with grated cheese
    Green salad

    *Combine 1 oz cream cheese, 1/2 tsp garlic powder, 1/4 tsp freshly ground black pepper and 2 tbsp chopped black olives in food processor, then place 1 tbsp of mixture in butterflied pork chop, seal with tooth picks, cook in fry pan.)

      Shrimp tacos:
      shells made with microwaving shredded sharp cheddar (soft or crispy is good)
      boiled shrimp
      avocado slices, or mashed*
      minced onion and cilantro
      hot sauce (in a pinch I discoverd that the 1 carb ketchup, some minced pico de gallo and a little crushed chipotle in adobo makes a great sauce for this)

      *If you live where avocados are not always their best in winter, then here is a tip to make them taste better.
      Mash the avocado as much as you can, add garlic, a little chili powder (not enough to make the mix reddish), and mayonnaise. Mix well. Whatever else you add is up to you, but these three will improve the taste of a not so great avocado.

              Hey JoanOH! How are ya? Glad to see you back around. I'm having a salad with all my favorites in it, sauteed baby portobellos, green pepper, & onion with grilled NY strips. Can't wait! I'm trying out a new recipe on Wednesday, Ham and Vegetable stew. I'm going to cook it in the crock pot. I'm not posting it till I try it. If it's good I'll post later.

                This was for dinner last night and having leftovers tonight:

                Chicken Cacciatore (Crockpot)
                1 whole chicken
                1 small can (6 oz) tomato sauce
                italian herbs/spices to taste
                1 small onion
                1 small can (or fresh) sliced mushrooms
                1 small can black olives

                Dump it all in the crockpot and allow to cook until the chicken is done.

                Yellow "rice" to serve it over:
                steam 1 head cauliflower
                when soft, add some olive oil and butter and 1 packet Goya Sazon (seasoning) for yellow rice (or you could use real saffron)

                This was delicious and made about 6 LARGE servings at 7 net carbs each serving.

                  My soups are all usually made from leftovers so are economical too!

                  Last nights 'recipe' went like this.
                  Put the carcase of a roast chicken (once you have removed the breast and leg/thigh meat) in water with your favourite seasonings, and simmer for an hour or so to extract the 'goodness' from the bones.
                  Remove the bones and strip the meat off them, return the meat shreds to the pan.
                  Add some sliced courgettes (zucchini) and simmer till they are soft.
                  Then put the meat/veg in a food processor and wizz it (with some of the stock) till it is a puree. You can use a 'stick blender for this process.
                  Return to the pan and add some cream or butter, heat and serve.

                    Tonight we're having spiced chicken breasts on a mixed salad of cabbage, lettuce, cucmber, baby spinach and onion topped with a garlicky mustardy vinaigrette!!

                          Hmm, I think tonight might be a "forage" night at my place...meaning my bf and I eat whatever looks good, usually leftovers or something that requires little or no brainpower to make.

                          So for me, I think that'll be an omelette and bacon.

                            Tonight: leftover chili, but I'm having it as a part of kind of huevos rancheros: chili, topped with cheese, topped with a fried egg. For my veggie, I'm having green beans sauteed in olive oil with garlic.
