    Carrots?

I have read just about every fourm here and I cant seem to find anything on carrots, are they leagal or not? I was wanting to make a pot of chicken soup with some cabbage onions and carrots, but I cant seem to find no information.
I am still working in the induction phase for the most part, but if I go over 20 carbs, I dont stress because I should be doing OWL.

        Re: Carrots?

Yes, that was one weird thing for me, too - those are vegetables and I have to give them up. Actually very disappointing, as they are one of the few local veggies available here at this point of the year...

          Re: Carrots?

I remember the first time I did Atkins thinking that was strange too...like butter and mayo sounding "taboo" on a diet and having to get used to that being OK - carrot sticks were "diet food" in my brain so that was odd - but I guess they have a higher glycemic index, so are more likely to impact blood sugar.

            Re: Carrots?

yeah they are "starchy", but if plan on adding more vegetable and you seem to be bored with the rest and really want some carrots in it.. think of in portions.. how many are u going to eat? 3 carrots?8.1 net carb for a whole cup! look at the carb points have half a carrot depending on how you cut it. One thing I don't like is too much restriction.. but I'd have half a carrot I"m sure you're not going to get out of lyposis with it. White flour, I'd definitely throw a stone, but uhmm half a carrot... its like finding couple of grains of corn in my salad...I push them aside, but some of them went down.. I mean it will only be a big deal if you make it. Just know its psychological, you seem disappointed about the carrots so have some

            Good luck

Surprisingly, I haven't missed carrots yet. They used to be one of the few veggies I liked, probably because they were sweet. But I'm almost there, almost to the starchy veggies rung...and all I can think about are lima beans! YUM YUM YUM!

Yes, I'm a lima beans FREAK! I like that they're dry...I could give up carrots and corn forever just to have lima beans. I'm also excited about butternut squash! That stuff is great...I ate some of it back in October before I realized it was a starchy veggie...stupid me, I thought, heck it's a squash, I can eat it on rung 1. DUH.

                        Re: Carrots?

I always wonder if Dr. Atkins had a chance to revise his book if he would have changed his stance on carrots...a small carrot is only 5 grams of carbs and if you're putting them in soup or something I doubt you'll be getting even a whole carrot. And their glycemic rating is horribly overrated as are parsnips. It ignores the fact that you'd need to eat several cups of them to actually achieve that kind of effect on the bloodstream...curious vegetable to say the least...(or perhaps the most)...
