Yeah, you've gotta be careful with this one, because it's easy to over-indulge, since it's low-carb. 2 cups, and it's no longer a low carb snack, you might as well have had a candybar.
Anyway, as long as you're being careful with it - I put coolwhip on top too - just like a pumkin pie.
That, and I don't always keep pumpkin on hand, so just last night, I mixed up
1/2 brick of cream cheese
1/2 cup of cool whip
some splenda, nutmeg, cinnamon, and pumpkin pie spice.

Most Atkineers buy double cream (heavy cream) and whip it themselves to be able to control the ingredients.

Ummm, I'm not so much of an ingredient reader, than a carb reader. 2 tablespoons have 2 grams of carb in cool whip - cuz I'm a lazy bugger who won't whip my own heavy cream. Maybe that's where I get into trouble and could step it up a notch. I know cinnamon is also on the high side compared to other spices. But it is a snack that can tide me over without gaining weight.
Eliz, excellent point! But the sugar free cool whip won't help, because it has MORE CARBS (just less sugar) than the regular stuff! Evil!
Don't use cool whip! It's pretty much a frankenfood. It takes 5 minutes to whip heavy cream, and it tastes about a million times better. And you know EXACTLY what you're putting into your body. Reading ingredients is important. If an item's ingredients are NOT on the induction list, or legal for your rung, etc., don't eat it.
